Oh god the wands!😂 Can't believe those are salt and pepper shakers. I always found the texture for koyadofu to be too spongy but the fried one might help with the sponginess.
Recently a new tip of a way of reconstituting dried Koyadofu was found by Japanees TV program.. that makes Koyadofu jiggly, not spongy.. 1). Bring a lot of water in a pan to a boil. 2).. Put dried Koyadofu into 1). after turning off the heat. 3). Put a lid on the pod qickly 4) just leave it as it is for 4 minutes That's all... You can have the jiggly Koyadofu like raw Tofu just with salt and olive oil... It's so healthy and good for a low carb diet....

Looks like the pockets on the aprons provide a really nice backdrop for cooking ;) I hope they're comfortable and fit well. I read about freeze-dried tofu in The Book of Tofu by Akiko Aoyagi and William Shurtleff. However, today was my first time encountering it outside of instant miso soup at a local grocer tonight. Even the Asian market I've been frequenting for 20 years never had it. With fall ramping up here in the States, I look forward to tossing it into a vegetable soup or a noodle soup.

The stuffed tofu is similar to "yong tau fu" here, which you can get at the night market. Where did you get the salt and pepper shakers? Not Daiso??? Will need to keep an eye out for those..

The pepper in this sandwich tofu are not really even.. you know.. lol. But its cute, so you can use it in soup. So dont hate me okay? 2. Can you filming how to made koyadofu? Because i want to eat this. This is so interesting. But i cant find it in my country, so may be i'll made it from scratch.. if it possible. Your foods especially the sandwich look so yuum! And when i tried to found it in youtube i cant find it. So.. 3. Love you both but i miss shinichi's sister and mother. Will they come sooner? And can sathosi family in the video to? I wish I could try any of this. I'm allergic to soy. There are so many tofu recipes I can never try because there are not really any non-soy tofu substitutes that I can find. My allergy is mild so at least I can still eat soy sauce because it has almost no soy protein. But I'll never be able to try mapo tofu or miso soup.
You can't go wrong by buy one and try them, but there are a lot of variations and just dont expect something meet like in taste. Here in Germany and Switzerland, the Tofu is more crumbly dry and tastes a little bit like wet sponge, I don't like it. But the asia version is more neutral and nutty. The best is japanese silken tofu and I put it a lot in my soup as little floating cubes, the texture is like a hard pudding but like silk, a light taste of raw nuts, creamy, soo good. I think the one from Moringa you will find everywhere. Or just try one of the pre-prepared one in the vegeratian sector in the supermarkets. Everytime I see something I never head I immediatly want to buy and try it myself and it's so much fun :D

You might be able to find an instant kombu dashi. It's made of seaweed instead of fish, so it's vegetarian. If you can't find it at the store I found a few hits on google for instant kombu dashi!
