This morning I made orange shortbread cookies and they are so good. I used every tip I heard you give about cookies. Ran went to the farmers market close to where we lived before mom passed, he home a half ton of fruit&veg 🙄 so I measured out my sugar and grated an orange into it and let that sit overnight. I used only half of the orange extract that my recipe calls for and added the same amount of vanilla. They were just great! The citrus extract was causing a bitter aftertaste, the reduction in extract plus the addition of the rind and a little bit of vanilla gave them a much MUCH better flavor! 👍👍 (2 thumbs up for sure)
Those sound absolutely lovely! It’s so hard to find a good citrus extract that doesn’t get those bitter tones to it. I do really like the frontier cooperative brand but being oil based they don’t last as long and can go rancid after a few months of opening. Vanilla and orange together just sounds so lovely!
@@Jacksonsjob I think some companies make their extract with whole citrus peels and you know like I know that pith is bitter. Bitter, bitter, B·I·T·T·E·R! 😣
That must be it! I bought some extract once that was so bitter you couldn’t even taste the lemon. It was just like horrible nothing taste that made your eyes water.
Oh 😯 can't wait to try this one! You know shortbread is my favorite. And you're right about shortbread cookies they taste even better after a day or two!
Isn’t it cool how it tastes better with age? Like vegetable stew! 😋 I just made lemon bars with a shortbread crust today. I think you’ll love that one if you are a fan of shortbread and lemons. I ate two pieces! 🍋🍋🍋
@@Jacksonsjob I found that out a few years ago when my sister was down here visiting mom. She was just raving about Bailey's Irish Cream shortbread cookies. She made a huge batch and I had a couple and they were good, but not like she was going on about. So mom packs me up about a dozen to take home. The next day when I ate one, they knocked my socks off! I couldn't believe how much better just 24hrs could make. And you are correct, its took my husband and me 3 days to eat them all and they just got better. She went all out and used kerrygold butter too...MERCY! It was all we could do not to eat the whole dozen that first day! 🤣
🤣🤣🤣 Kerry gold is like royalty butter 🧈 those must have been amazing! One thing to make shortbread taste so much better the first baking day is to chill the dough covered overnight and let the flavors develop.
I watched a LOT of baking shows when my shoulder and neck was stuck in place like a barbie doll for months. I can tell you a lot of fun thanks to all those shows and probably where I learned it from. 🤣

I always use unsalted butter whenever possible but if you only have salted, it will work with the recipe. Just omit the 1/2 tsp of salt if you use it.
