    Hey, I can clearly see that your melted chocolate is very grainy! You must grind for 24 hours. Gediva grids for fourt days in a professiona machine not a wet grinder like us.

      24 hrs is not required for a relatively small grams of chocolate nibs. I wet-grind 333 gms of chocolate nibs with the same ingredients as her, and found that at 6 hr. mark, the consisitency wouldn't change even if you grind them for 24 hrs. It's so silky smooth.

    Awesome presentation! Can I use only cocoa powder in place of cocoa nibs as it's not available easily at my place?

      Thank you. To make good quality chocolate you will need cocao nibs, powder and cocao butter. Cocao powder is made by removing fat from the cocao nibs. Which means that you will need to add more coco butter to get desired texture. You can experiment and see. It should work but taste and texture will be different.

    Hey, I loved this video! I am planning to invest in a wet grinder for grinding chocolate. How long does this grinding process take? I am not sure if wet grinders can run for so long.

    Learn and cook I decided to buy a wet grinder , guess what ... wet grinders suck for chocolate .. your chocolate must be like sand after grinding for a couple hours in that thing

      I recommend to grind with this machine for at least two hours to make chocolate smooth. Best way to set chocolate at room temperature for 12 hours or overnight.

    Hi persida I followed ur exact recipe but I cudnt get cocoa nibs so I added more cocoa butter it turned out good even i got the snap...but my chocolate melted very soon when taken out of fridge so I'm not sure what to do can u pls suggest me a solution

      Chocolate should be solid at room temperature. If it melts then you didn’t temper the chocolate correctly.

      Chocolate needs to be tampered otherwise it will have different melting temperatures. TH-cam has very helpful tampering videos.

    why use cocoa butter + cocoa powder in the ingredient when you already have the nibs? Those two are literally separated from the nibs..

      I wonder the same, but having about >50% of cacao butter relative to cacao nibs, you'll get rid of that bitter chocolate taste. I've experimented with this and I always use 50% cacao butter, not like hers which is more than 100%. The reason being cacao butter is so expensive, but I would want to add more if it wasn't the case 😁

    Hello, your videos is very helpful for me.. thank you for sharing your knowledge with us.. wet grinder .. is it costly to make chocolates.. means my question is how much units( electricity) consumed my the wet griender by 24 hours( continue running)

      Ohh so grt to see your reply, i have one more question.. how much time consumed for the chocolate making process in this grinder.. creamy texture like dairy milk or other .. plz reply.. its really helpful

      I would recommend not to do more than 2 portions at one time and grind for at least 2 hours. You can always scoop some and taste it to see how smooth it is. My perfect time is at least 2 hours. Big companies do it for few days 😁

    If you're grinding cacao nibs no need to add cacao butter as nibs contain butter...

      It’s used to make it creamy(mandatory )but she did add alot usually it’s very small percentage
