Just made Appam batter today so we can make Appam tomorrow. Planned veg stew so this is perfect recipe chef! Your thayir sadam was a hit lunch in my family. Same with many of your other dishes. But we made batter with 1:1 ratio. 1 part raw rice to 1 part parboiled rice. Will try your ratio next time. This 1:1 gives soft appam for us.

I looked at the video and have to say Chef Sunder's recipe has a problem. Look at the video closely. There are cracks on the surface of the Appam. You should get open pores not cracks. His proportions are wrong. 1:1 is always correct for Appam. I used cast iron Appam chatti.

In Kerala aappm recipe is different.They use only raw rice and yeast for grinding.

In Kerala they use raw rice, grated coconut , and boiled rice grind it and add salt and yeast to fermentation. In stew they add cashew nut paste also!
