  • For Fried Chicken Lovers, here is a Cantonese cooking video for you. After frying , rest them for few minutes. Then re fry at higher temperature for few seconds, to make the skin crispy. This is also marinated with tasty ginger /soy sauce/wine. Enjoy. NOTE: video shows boiling those used marinate are fast forward several time and most segment where cut during editing. In order to save time. It look like been flashed boiled for few seconds, but actually the marinade was boiled 2 minutes. ( common practice in chinese restaurant to convert spend marinade into tasty thick sauce ) Enjoy.

    I lived in HK for 10 yrs. This used be my favourite dish and I was craving for every single day. I didn't realize there is this video in youtube. I made it yesterday and ate it with rice and gingeronion sauce. OMG it was sooooooooooooooooooooo good. Thank you very much for sharing this recipe. I wish I could kiss your hands. :D

    I tried cooking this for dinner and omggggg it's so yummy... And idiots making comments about the marinade sauce if you guys don't like it... Then all you guys could do, is make another measurement of the marinade sauce that she used, and add the sugar or double the measurements for the sauce, and keep it longer on the stove and have some reduction from the sauce, it's simple as that... Viewers please use your common sense sometimes, not just unnecessary comments ....these cooks tries their best to teach us some techniques for us to learn their way of cooking from different cultures. Thumbs up for the cook

    Very nice. People worried about cooking more, just do that. I'm not much on deep frying but you are instructive if I do. Going to try the ginger marinade. I trust you could do a whole cut up chicken this way too. Nice.

    Happy... love the videos. Would love to see you demonstrate how to chop chicken into pieces. I'm guessing you use a cleaver, but I'm not sure how it's done. Thanks for your work.

      Thanks. Yes, I used chinese clever. I first sliced the skin slowly ( while holding the skin to avoid skin separation from meat. Then continue to slice ( like saw the wood movement ) the meat down to the bone. And finally rest the cleaver down to the bone. With your other hand, open palm and strike the top of the cleaver with force that you can manage without hurting your self. Thus cutting the bone nice and clean.     Great recipe!! The only tip I have is to reserve some of the marinade for the sauce you make and pour over the chicken before using it all to marinade. The chicken soaking in the marinade and then you take it to make a quick pan sauce to pour over the chicken which can make you sick. Any marinade even when cooked is not guaranteed to kill all the bacteria from the chicken juices.

      these sauce are not spoiled, they are still fresh. And also once the boiled ( that is 212 F ) that is cooked. Have you notice, beef steaks internal temp at 160F during BBQ is considered safe to eat? Thanks for your concerned and Thanks for watching .

      you are correct. when we were living in NYC, our apartment has gas stove, which i love the BTU it created. But here in Seattle, we only have electric stove. So, i have to adjust my cooking timing. thank you for watching.

      When I was a kid, I started helping my parents in their restaurant business. Then immigrated to NYC in the 80's and work in a chinese restaurant at NYC chinatown. Retired 10 years ago. This is why, I got lot of time making cooking videos and answering viewers comment.

    hi sensai! I am sitting in the car on the highway with my wife driving us from Vienna to Salzburg and enjoying my subscriptions. I wanted to ask why does one pour oil over the finished Fried Chicken like that? I am assuming a dish like that is eaten with rice anyway so the sauce will help with the rice but isn't the chicken crazy enough? by the way if you have video footage of you chopping the chicken with a Cleaver I'd like to see that as well :-) as we all know you are a retired Samurai I bet you have some serious knife skills.

      pouring super hot boiled sesame oil and peanut oil, makes skin crispier. some asian eat with steamed rice, but some preferred eat w/o rice. I do have some tricks how to minced ginger or garlic in 2 minutes or slice meat, i got 4 chinese type very sharp clever in my pantry. good suggestion. i will think about that.     hi chef love your cooking very much, a question what can i replace rice wine with cause living in Saudi Arabia anything that is alcohol is not permitted please help me find a solution cause most of your recipes use rice wine, thank you in advance...

      Sorry that we are not of the same culture. But instead of using rice wine, you may substitute slightly beaten egg white. So it helps moisturized what ever we are marinating. Other times, use plain water, will do too. Thanks for asking and thanks for watching to my viewer in Saudi Arabia.

      Peanut oil ? have you try to shop at larger asian groceries? they should carry them. ( BTW, it has high smoke point: about 400 F ) Yes, My parents own a chinese restaurant, where i learn from them and work with them in my early days. Now, i am retired.       Yes, this is one tasty cooking and yes, those video are almost at the angle were the cook is seeing. I have no problem viewers copying those videos for their own future reference.     This is a good chicken recipe but what can substitute rice wine and how to juice ginger?is peanut oil really necessary?

    One question sir.. Don't we have to cook the marinade sauce for a bit longer because it was used to dip in the raw chicken. I mean it's already contaminated..       We cook the used marinade for over 2 minutes at least. all my cooking videos, are edited to shorted length and also fast forward 2X. It looks it was only boil few seconds. But actually was more than 2 minutes. Thanks for your concerned and thanks for asking.

    You had raw chicken in your marinade and flashed cooked it for about 5 seconds. Do you think that was enough time to kill all the bacteria that could have been in sauce?

      It looks like flashed cooked for about 5 seconds, but that was fast forwarded video clips and was edited to shortest clip as usual. to save time viewers watching it boiled for few minutes.
