    wow im blown away at how beautifully cooked that chicken is. that sauce with some egg noodles, bok choi, chinese broccoli with a nice chicken quarter would be a meal fit for a king.

    Great tasting chicken! I have made it twice already and will do so again today. I’m going to use some of the previous sauce to cook the chicken, making it supreme master soya sauce stock. Yum.

    Just tried your recipe while making a few modifications, and it turned out really well! :) Thanks for the recipe.
    Just sharing some of my modifications here since I do not have the premium kind of dark soy sauce that you used - instead of using 1.5 cups of dark soy sauce, I used 1 cup of Lee Kum Kee dark soy sauce (老抽), and 0.5 cups of the Elephant brand cooking caramel that we use at home too. Also added some rose wine into the 卤汁 itself, which I felt really added another taste dimension to the dish. All in all very easy process, thanks for sharing!

      Tian Min Tan Thanks for your feedback. Cooking is very versatile once you know the basic. I always emphasise that there is no one way to cooking but a variety to suit individual taste.

    When you turn high the heat on last 10 minutes did you cover the lid? Is it total 20 minutes or 30 minutes on the heat?

      Lechi Lam Cover the lid n cook for 10 mins. Total time 30 mins.

      Wong Kelena Hi Kelena, you are right. Not many market carry this brand, only certain stalls have it. You must ask for it. However, you can use the elephant brand dark soya sauce as substitute too.

      Jess Lee Hi Jess, yes you can but be cautious as golden syrup is very sweet, so use sparingly. You don’t want to turn the chicken into a dessert, right? 🤣🤣

      Angie GL It’s the same sauce for cooking the chicken. Just take a little and pour over the chicken before serving.

      Ukulele YELLOW Hi Ukulele, yes for sweetness and to dress up the chicken to make it looks glossy and smooth but not tender. The chicken is already quite tender.

    I've tried this a bunch of times and it's tasting better and better each time, but the skin on the chicken always rips off when it's boiling, anyone know a way to prevent this?

      Maybe try to lower the heat? You must have a really powerful stove.

      When you wash the chicken, make sure the skin is intact. It shouldn’t break during cooking unless you accidentally punctured the skin. Any small slit on the skin will cause it to shrink during cooking. Hope that helps.

      meg praise No worries. You can get any dark soya sauce but you need to taste it first. Some dark soya sauce is very salty and the color is super black. Add according to the color and saltiness you prefer. If it is too dark color, add less of it and add a little more light soya sauce to compensate the taste.     its so raw its still running around the field

      Actually she put it in on high, turned it down for 20 mins to a medium and then 10 minutes on high to finish, plus resting 10 minutes
      This is braising a small bird completely submerged in hot water, not roasting.
      So the timings are different.
