im heutigem Video zeige ich euch wie man die kleine Schwester der Weißwurst herstellt! Sie, die Wollwurst, ist eine geschmackliche Sensation da man sie als Bratwurst sowie aber auch als Currywurst verwenden kann und das beste ist, diese Wurst hat keine Haut!!! Das ist doch klasse! 150 g Schweinefett Backe
250 g magere Schweine Schulter
250 g Kalbfleisch ohne Fett und Sehnen
150 g Eis Schüttung
Gewürze:
19 g Kochsalz
2 g Weißer Pfeffer
0,2 g Kardamom
0,5 g Macis
0,5 g Knoblauch Granulat
Zitronen Zesten einer halben bis ganzen Zitrone
3 g KTH ( Kutterhilfsmittel ohne Umrötung = Phosphat = Backpulver )

The ingredients for 1 kg sausage meat:
Meat:
200 g pork back bacon
150 g pork fat cheek

Servus und Hallo!
Der Kutter ist von Gastro Hero! In den Bewertungen ist ab und zu zu lesen das es ein schlechtes Produkt ist das sich in " Rauch " auflöst aber das ist Blödsinn von Menschen geschrieben denen es schwer fällt eine Bedienungsanleitung zu lesen!!
Dort ist klar festgehalten das men den Kutter VOR dem erst gebrauch, drei mal für 10 Min. laufen lassen soll damit sich das Montage Öl abläuft, was mit einer Rauch Entwicklung verbunden ist! Tja so ist das nun mal. Ich benütze das gute Teil ein bis zweimal die Woche und bin sehr zufrieden! 😁😁😁

Hallo Wolfi, vielen Dank für das super tolle Rezept! Ja es stimmt, Gschwollene gibts nicht mehr so oft bei den Metzgern! Hab das Rezept auch an meinen Sohn weitergeleitet! ich staune, was es alles für Wurstspezialitäten gibt. Wollwurst habe ich noch nie gesehen, aber bei uns ist sie wohl auch nicht typisch. Du hast alles sehr schön gezeigt und erklärt. Finde es toll, dass du dir jedes Mal viel Mühe gibst, so einen guten Content zu bringen. Es ist richtig spannend zuzuschauen, und das sage ich, obwohl ich nun ganz bestimmt keine Wurst mag. Also ein ganz großes Lob!👍👍👍

Ich habe und das ist tatsächlich richtig ehrlich gemeint, immer ein wenig ein schlechtes Gewissen wenn ich was mit Hähnchen oder Wurst mache denn ich respektiere es voll wenn damit jemand nicht konform läuft! Nicht jeder mag Fleisch oder kann es aus ethischen Gründen nicht bejahen Fleisch zu verzehren!
Das verstehe und akzeptiere ich komplett. ja und wenn ich dann was in die Richtung mache und dann weiß da sind Menschen wie Du, ja dann ist dass schon komisch in der Magengegend! Von daher sage ich zwei mal Danke an Dich aber, nächste Woche gibt es kein Fleisch............... versprochen!!😁😁😁😁😁😁

Aber bekommst du deswegen manchmal kritische oder böse Kommentare? Ich finde, du gehst sehr sorgsam mit Fleisch als Lebensmittel um. Lass dir deine selbstgemachten Würste ruhig ohne schlechtes Gewissen schmecken, Wolfgang! Du legst eh zwischendurch mal einen fleischlosen Tag ein, mit viel Gemüse und Salat zu den Mahlzeiten. Das schmeckt köstlich, sättigt auch und ist gesund👍 Kannst ja als Ausgleich mal wieder einen vegetarischen Gemüseauflauf oder sowas als Video bringen😉
