This guy knows what he's talking about! Been using Pollard's for over 40 years.You need to use hot almost boiling water, it partially cooks the cornmeal. It really does make a difference. Have that iron skillet hot enough so that you hear a sizzle when you put in the patties, this way they won't absorb too much grease.
