Some tips from a mixed Chinese-Nyonya Malaysian: 1. Best add the coconut milk last, this will help avoid funny coconut oil smell. 2. Use fish sauce instead of salt for final flavour adjustment, the umami of fish sauce helps double the taste. 3. Use tamarind juice instead of lime/lemon juice. 4. If you can find Malaysia's shrimp paste AKA belacan, pan fried it or bake it over fire before adding it into the blender/food processor.
as a proud malaysian living and working away from home, its so comforting to hear Marion coin our curry as one of the great curries in the world. thanks Marion for making this recipe a piece of home for us ❤️
I had some brilliant Malaysian food when we lived in KL in the late 1950s. Nyonya food is a particular favourite. Beef Randang, Laksa just start the list of glorious foods.
Thanks Marion ĺived in Malaysia for 3 months in 1976 fell in love with the country, people and their food in particular the curries both Chicken and Beef.
Actually, if you wash your blender and leave in the sun, the yellow from the tumeric disappears. My mom told me she used to hang tumeric stained whites in the sun to get rid of the yellow. It works on my nutribullet.
I just made this for dinner. I absolutely loved it! I made jasmine rice and roti to go with it. She's definitely right about that shrimp paste. Just throw it in without smelling haha
Marion I just tried this yesterday. My son loved it. Thanks to your easy instructions it turned out quite well . And I'm just learning my way in the kitchen. Thank you
The Story behind the name is as such. The chef /cook was cooking Curry one evening. The ship's Capitan smelt the aroma of the cooking curry. So he asked the cook..." What are we having for dinner? Is reply he said " It's curry, Captain." Hence its name "Curry Kapitan". Incidently I cooked Chicken Curry Kapitan for my family. 🤗
I marinate the chicken pieces with tumeric for a few hours or overnight n deep fry and add to the sauce. Also add a few candlenuts to the paste. This recipe from a Peranakan chef.
I always like and admire this dish. This is a fusion cooking , the embodiment of malay and chinese cooking which known as nyonya cooking historically. Linguistically, the word kapitan derives its name from captain in origin as a root. Yes, you are right Marion , this dish fulfiiled the old school captain back then.
If you have any leftover of this curry the next day it taste even better. I kid you not. The flavours after it's a day old is just divine. Mop it up with white bread or roti canai. You're welcome.
This is a really unique recipe for me. I'm from Pakistan and most of these ingredients are not commonly used here. But that makes me even more eager to try this because I just love trying new and different things. Would definitely search for these ingredients and make this curry.
Dear Marion, I watch your videos as a therapy for my post partum recovery. I want to sincerely thank you for making such soothing videos of great recipes. Never stop making these videos . Love from India💛💙❤️💚
I just made this recipe with Asian store bought red curry paste, added fresh garlic, ginger, onion, and jalapeños from a store bought jar (turmeric was mixed in after the blending). Instead of legs and thighs I used chicken breast, but added home made chicken broth instead of water to enhance the flavour. The final result is still very delicious when following the rest of the recipe.
Thanks for sharing. Finding these dishes brings back memories of mum making it in the kitchen and me smelling it from down the street as I walked home from school. Now mum's gone and being an only child/son, I'm trying to find all the recipes for the foods mum used to make as a way of connecting with her. Luckily, my wife loves spicy foods (I cook sambal tumis telur, beef rendang, etc from scratch). Going to try making roti jala (need to find one of those special scoops), keuh lapis and all my childhood favourite dishes mum used to make. Keep doing these videos.
Definitely a thumbs up 👍 from a Malaysian here with Malaccan roots. Good job Marion and looking gorgeous as always. My family especially my 9 yr nephew is mesmerised by your presentation. Thanks and best of health to you and family.
Hi I'm a Malay in Malaysia. I'm salivating just from thinking about eating this or Beef Curry with Roti Jala. Very simple receipe just google Roti Jala. Eat this with roti jala and you will be amazed. So so yummy or another option chicken curry with steamed white bread or regular white bread or roti canai or paratha.
So excited to see Marion's making a Malaysian dish!!! also as much as malaysian hates getting their blender stained with tumeric yellow, we cant really escape it... right now i have yellow blender, yellow chopping board and yellow knife blades...
Holy Moly, Marion!! I tried this recipe and it turned out so great. The best curry I ever made and it was not even too hard to make it. So aromatic. 👍👍👍 Marion, you’re forever my teacher.
This sounds amazing. When I'm able to travel more freely again (panorama restrictions still ongoing here) I'll be making a beeline for my favourite Asian market to buy the ingredients to make this!
I grew up in Nyonya country and curry is traditionally made the way you cook it.. fry the paste1st and coconut milk last; kapitan or not. Today I turn it all around; fry chicken (fennel seeds, dried coriander) 1st, then shallot, garlic, anion, curry & turmeric powder and no coconut milk but with very little water (I like the thick gravy). Taste as good and I will heat it up tomorrow morning to go with some bread. I laughed before you did about turmeric making your blender yellow.. hahaha
I've been living in Malaysia for the past 30 years and Nonya Baba cooking is the best in the world. When you ask an old Nonya auntie how to make, they will always leave one item out! They take their recipe to the grave.
This looks sooooo amazing! I'm half-Trini and make curries all the time. Have you ever marinading the chicken in your curry paste overnight? Thanks for this recipe!
You're brave woman for handking wet dried chillis like that. I remember trying to make my own stock of chilli paste without wearing gloves, my hands were unusable for a day thanks to that
I just buy a small packet of Adabi curry powder, small pack of 🥥 milk, 🌟 anise, cardamon bub, curry leaves, okra, 🥔, onion, garlic, ginger, galangal, lemongrass.... Mix everything in pot, put chicken.... Voila, simple🐔curry dish served.
We need like a shopping list episode. Must haves/essentials plus another one with everything we need in our pantries for all your dishes. So I can just do a big shop have it all there for days Im drulling over your food.
So so interesting. I'm an American who learned Nyonya cooking from my Mother in Law in Singapore. I asked my husband if he had this curry growing up and he had not. We mostly make rendangs, Nyonya chicken curry (yellow), fish curry, etc., and other classics from Singapore. Do you have more history on this curry? Would love to know. Thanks!
Marion is amazing. Her recipes are awesome and she presents it with so much enthusiasm and love. Looking at her already brings me in the mood to start cooking 🧑🍳 Marion you’re awesome
I made this and it was so delicious. I added curry leaves because I had some to use but next time will leave them out so that the lime leaves shine. Thank you
You are truly inspiring, Marion! My favorite chef, by far! Your passion and knowledge is limitless and your personality makes it all come together. I come from a mixed race family as well, American and Japanese and your mom reminds me so much of my bachan (grandma) when she was alive. Keep up the amazing work❤️❤️🙏🙏
I love shrimp paste!! I put it on sliced pork in a bowl and steam it. Totally addictive eating with plain rice 😋 Ps. Supreme is breast with the lower wing leg joint attached (minus wing)
I'm such a fan of the Curry dishes serve at a Malaysian in downtown NYC, I'm hoping this is it or at least close. This looks a lil thicker but colors profile is close. Can't wait to try it. Thanks for the upload.

What is the best type of dried chili to use?
She never really ceases to amaze me. The way she's so enthusiastic about each of the dishes makes it even more intriguing! 💓
It goes even deeper than that. Enthusiasm is one thing, her expertise is amazing.
Totally agree ! Love from Fiji 😊
Marion's cooking shows her real love of really awesome food
In the states, we call that piece of chicken, when it’s whole, “leg quarters” lol

I had a long layover in Malaysia on my way to Australia and I had this kind of curry for dinner at the airport! The memories T_T
Can you use Thai red curry paste as the ingredients are exactly the same apart from adding turmeric?
