I just made these for dinner. Omg - so delicious! I added some chopped mushrooms & fennel to the meatballs along with a dash of liquid smoke. Very soft & jam packed with flavor. Great recipe, thanks Donal!

This is pretty close to my own meatball recipe. I don't use buttermilk though. I put in warm water a little at a time until it's smooth. They are incredibly juicy and delicious. My nephew deemed them the best he's ever had haha.
Buttermilk is new to me. I make meatballs for my household and I am thinking I have to add buttermilk to see how it goes. Thanks for the tip and the meatballs look great.
I made these last night and EVER good!!! Sauteed up my 'veggie' side dish of mushrooms and twirled in some whole wheat pasta and this will be my go to meatball recipe. Just to add, your basic tomato sauce was perfect!!! Thank you!

Many years ago, here in Aurora, Illinois, we had a restaurant called, the "Bit of Sweden" only two blocks from my house. Just tried this recipe and it was a big hit with my family. Didn't have buttermilk so used yoghurt instead. Didn't have dried oregano. Instead of passata, I used 2x cans of Coles diced peeled tomatoes, with already come in an Italian flavour, so oregano was already included in that. Turned up the heat, cooked covered with foil for 50mins. Left it uncovered after I added the cheese. (This recipe just takes too long to cook otherwise.). I served it with penne with chunky roasted tomato sauce (Another Donal recipe). but I added some roast peppers in there as well. You can roast the veges at the same time as you roast the meatballs. Was a hit with my family!
Didn't have pancetta either, so I used cubed ham that I browned beforehand in a small saucepan. (Dont skip the pancetta or ham - Definitely need this ingredient in there for the wow factor)
Made these and added a couple of finely chopped habaneros for that “spicy meatball” effect. End result were the best meatballs I’ve ever eaten - delicious! The overall preparation time took longer than the recipe indicates, so bank on a further 30 mins or so.
Just made baked meatballs the other week! So delicious! You should try this recipe with a slow cooked tomato sauce (we call it "5 hour sauce", because that's how long it takes) as well, because the acid really breaks down and the sauce becomes incredibly sweet, which is a great contrast to the savory meatballs. And I also love putting mozzarella pieces on top. Delish! Amazing recipe, will definitely try your variation on the meatballs.

those meatballs look fabulous! i've never used buttermilk, but i have used a bit of sour cream or creme fraiche. you're so right though, that tang adds something wonderful that you can't quite put your finger on. i've also made meatballs with small chunks of cheese in the middle - they come out of the oven all oozy and delicious. i love your recipes and the new cookbook is awesome!!
I did this recipe and I have been thinking about it all day! my mom used to make meatballs all the time, such a huge part of my childhood. I never did them with pork before and I can say I'm pleasantly surprised! I have been going more towards turkey as of late but this was a treat. On a side note. You may want to add pine nuts to your meatballs. it as a nutty flavor. That is another part of my youth. Also does anyone else eat their meatballs cold?? I can eat them any temp lol Hubby isn't fond of it but mmmmmm

For anyone who needs a gluten free alternative: Use ground sesame seeds. Just put about a couple tablespoons for 500g of ground beef. It works great!
