Please try Lehninger's Principle of Biochem as a reference book if you haven't already. Vander/Harper/Stryer does a good job but Lehninger helps to build the foundation of the concepts.

For real! I tried Harper’s and Lippincott now in my first year med, but it was this explanation that made it make sense.

It is called Oxidation because of stripping the Electron from NADH and FADH2. It is called Phosphorylation because of giving a Phosphorous to ADP.
