Loaded Smashed Potatoes

  • These loaded smashed potatoes are crunchy, super easy to make, and a perfect vessel for your favorite toppings.
    Step 1:
    Wash and cook the potatoes using your preferred method. I steamed them in the Instant Pot, but they could be just as easily boiled or steamed on the stove top. The size of the potatoes will determine how long to cook them for.
    Step 2:
    Smash them on a parchment paper lined tray.
    Add salt and pepper to taste.
    Cook at 450F (230C) for 25-30 mins, turning halfway - or until they are crispy, but not burned.
    Step 3:
    Plate them up and load with any of your favorite toppings. I used my cheese sauce (see my Mac & Cheese video for the recipe), sweetcorn, shredded red cabbage, tomatoes, green onions, and a cashew sour cream drizzle.
