Hi, this recipe makes 4 pieces of the salmon Wellington. So it serves 8 people (1 salmon per 2 people). You could get larger fillets and increase the ingredients to accommodate or you can make an extra salmon Wellington. Don't forget that is also depends on what other food you will have prepared. The more variety the less each person will have of the salmon. If it will be primarily the salmon Wellington, then you need more. You can make 1.5x what this recipe calls for. You can omit the spinach if you want :) It's honestly so minimal that you can barely taste it. As for side dishes... and kind of pasta or mashed potatoes would be great! I hope you all love it! :)

You are very welcome :) You can make the spinach mixture ahead. However, I would assemble it the night before. The puff pastry can get soggy from the moisture and it won't be the same. I hope you love this salmon Wellington :)
Hi :) I have not tried that so can't say if it would work. I am afraid it would burn the puff pastry before the inside was cooked through. Hope that helps!
I use pepperidge farms puff pastry and I get them from Albertsons. Most stores should carry them. They are in the fridge/freezer section. Hope that helps :)
@@gisela1074 if they don't drink wine, they probably don't drink vermouth either. I Ithink the goal is to avoid alcohol. I will be trying a mix of white wine vinegar+water+lemon. The wine is an acid that will help break down the other items so you'll want to replace it with some other acid, and I figured lemon and fish are a good combo but straight lemon juice seemed harsh.

It's just me dont worry. You should see Balkan people when they cook its really hard and take ages that's only why I am saying, to me peace of Salmon wraped in the pastry (not home made) a spinach on it. Can you imagine when you need to explain how to make pastry to people. Don't worry it's just me😊😊
The white wine gives flavor but if you don't use wine then you can use chicken broth. Replacing the spinach with the basil will not work. Basil is an herb with a strong flavor while spinach is considered a leafy green vegetable. Hope that helps clarify and I hope you get a chance to make this salmon wellington :)

Can you make this up a couple of hours before baking if having guests for dinner. I wouldn’t do the egg wash until ready for cooking.
