I've done this dip for years, and it is a crowd pleaser. Now I add a pound of chorizo beef or sausage, green chiles, smoked paprika, and a pack of onion and chive cream cheese too. I cannot make enough of it to have leftovers. It gets killed every time.

That onion and chives flavor gives all the salty ingredients a needed sweet hit. Also a splash of balsamic vinegar. Totally changes the flavor profile for the better!
Two tips... 1) use sausage instead of ground beef!!! 2) drain some of the Rotel liquid off and keep it aside. As people eat the dip while the rest is in the slow cooker, which has been thickening, use the liquid to thin it back out. Warning.... it gets hotter as you add more of the liquid, but at least it helps to keep the texture consistent, instead of ending up with a thick paste. If that's not to your liking, you can try adding milk at the end to thin it back out again.
I make this often, every 4th of July. My recipe 2 jugs of salsa 3 lbs of lean hamburger (cooked and drained) 2 cans of rotel 1 block velveeta (add more of I have partial block) Serve with chips(: Favorite in our house(:
I've never made this before but doing your way does the cream cheese and milk really make it that much better if so when do you add those 2 ingredients to it

I’ve made this twice since I saw this video for tailgating. Everyone gave rave reviews. Only thing I did different was diced jalapeños. Thank you for sharing.
For those who do not like it so hot, substitute a bit of chicken broth for the second tin of Rotel. I love beef, but I stopped eating beef and pork years ago. I still do eat a bit of chicken but not an excessive amount. Could you substitute shredded cooked chicken thighs for the beef? What about ground turkey?
Recipe looks great and I don’t say that a lot about the recipes I see in here. Try “loading “ some crinkle cut fries with this using ground beef for the meat. I’ve used grilled chicken, the kind pre-cut for fajitas also in place of the ground beef with a taco season packet or two.
I'm not positive, but I would use the regular pressure setting for maybe 5 minutes or so, if that.. This stuff will burn like crazy along the walls of pots if they are too hot so I would imagine its the same in the instant pot. Let us know though!

I've only tried Velveeta and Rotel, but it was perfect for once. I left most of the juice in Rotel and it was WAY creamier than last time when I drained it.
Tried this with a little bit of a twist, instead of ground beef and chili powder, I browned diced ham, and added a SMALL amount of crushed pineapple with 4 oz cream cheese. Turned out amazing, thanks for the vid :)

I make a similar dip, but with only 1 can of rotel. I make taco meat and also use a can of no beans chili. Soooo good

No. Two hours and it will start thickening and burning.
I substitute the velveeta for Kraft singles. It's less salty
