    My husband says I am a good baker but IMO and as a fact, my cakes have always lacked that professional smoothness and evenness. Hopefully, this vid will give me the encouragement I need to take it to the next level. Thank you!

      You can also take a good quality paper towel like Viva, slightly moisten it, then gently press it against the cake with the off-set spatula and smooth it out. My ex-SIL took a Wilton Cake Decorating class and I helped her out once. I picked up a few tricks from her.

    I have never made a cake in my life but it was my birthday yesterday and i had no cake for my birthday.....
    So I suggested to my mum that id like some cake decorating tools haha so I am now the proud owner of a Turntable, Piping set, cake leveler, offset spatula, mixing bowl, cookie cutters & a few other extra stuff..
    I am going to attempt to make my own cakes for my family's birthdays because we live in the middle of nowhere and the supermarket cake is not very nice at all.. I found this video very informative Thank you & WISH ME LUCK

    I have only just started cake decorating like this and I find Jemma's instruction so easy to follow. Have just iced my first cake with buttercream and I found that for final smoothing it helps to warm knife blade in hot water, dry it off quickly then smooth off icing. Works a dream! Thanks Jemma, you've inspired me.

      That's how they used to teach you to get a smooth finish, before they had all of these gadgets. We used to add icing to level it, too. I'm 65, so that tells you how long ago it could be 😁

    I invested in cake baking strips that wrap around the side of the pans before baking and they help keep the top flat and there’s no need to cut off the sides of the cake because they don’t get hard and crispy but stay soft and moist. A real revelation.

    Ive been tried to figure this out years ago. Not a cake decorator but still want my cakes to look at least some what pretty. I ended up giving up on baking ( not for this reason) And now years late yippee we have internet and TH-cam and wonderful people like yourself willing to share the know hows. Thank you now I need cake scrapper and turntable and see how I go. until that time Ill just put up with not so pretty cakes. Thank you again.

    +Cupcake Jemma Hi Jemma, I just discovered your channel a few weeks ago and I must say - I'm already addicted! ;-)
    I love your recipes, I love the way you make the videos cool and funny, and I LOVE the way you speak English (I'm German, and I'm an 'anglophile', and I love the English language - but only spoken by the right people!). :-)
    But what strikes me most is the way you "handle" all the things you work with. You are so gentle and careful, you could almost say tender, with everything - I can really see how much you love working with the different ingredients!
    And you are also sooooo patient, I wish I were half as patient! I bake a lot, but it always has to be quick and easy. I don't care about sifting the flour, for example, and when I see that a recipe has many stages, I don't even start it, if you need a piping bag I try to find a way around it ... (to be continued ... )
    You made me see the difference - I work superficially, you work thoroughly, and probably that's one of the most important reasons why my 'products' are not like yours! :-)
    Thanks a lot for your inspiration - it's much fun watching you, and I learn so much from you! I'm sure my next baking experience will be completely different, thanks to your influence!

    Using damp cake strips on the out side of the ting to bake the cakes prevents the cakes browning and over rising so you get paler cakes sponge and not having to level off and cut it and less waste too !! It was my auntie who was a judge at baking shows and of course a professional bakers as she gave me the tip of she been baking for 40 odd years x

    Hi Jemma, a really silly question. Before you do your crumb layer, you mentioned that you put the cake in the fridge. Do you place it in as is or cover it, im always scared it will dry out a cake?

    This helps so much. Did a buttercream cake recently and I didn’t trim the sides which was my first big error, and also the buttercream was too moussey. Think I’m going to make a cake just to test these techniques!

      Use a spatula to smooth the buttercream and knock out the air before you apply :) can always refrigerate it too

    I have never thought to cut the sides of the cake like this because I've never seen it done before! I usually just shave as much crust off the sides as I can. From now on I'll be using your technique! Thank you so much for this video!

    Jemma, I have never taken a cake decorating class,and this video was very helpful. I like to challenge myself by baking my own birthday cakes.Baking is one thing,and decorating is definitely another. I am going to leave the decorating up to the experts. I did take away a few tips about adding a them crumb layer before adding a main frosting for the whole cake. The designs will be left up to the experts. LOL!

    For your kind information try the "peppy kitchen" tricks of using cake strips to get rid of the cake dome nd crumbs and to get it super soft and avoid the uneven colors which have to be cut off before icing ..when you use ityou dont have to cut your cake from all sides.. that will be really useful for you

    Buying inexpensive cake level strips and putting them around the pans for baking saves heaps of time and saves any of the time consuming levelling done here. Cake layers bake up perfectly flat and level every time and you don't need to trim the edges either. Saves time and cake!

      rokaya boucherabine Have you tried dipping your scraper in hot water? It warms it up enough to gently melt the outer layer into a super smooth finish. I use a metal scraper, dip it in the water for about 10 seconds, wipe off the water on a paper towel, and then start smoothing. Re-dip every once in a while to keep the scraper hot.

      No joke! I did this tonight and first of all, my BC looked terrible. Second, my cake was way too crumbly and impossible to cut like she did. Third, I couldn't get the air out of my BC.

      Ryn 2011 Two fails so far- looks so easy but harder than it looks. anything you have to practice at is not very easy at the start. It can be both frustrating and exhausting if it doesn't turn out right.

      ShattyMcPants It’s about coordination. It is not hard. Fact is, most people trying aren’t exactly used to working with their hands. Woodworking, painting, etc. THAT’s hard. Learning to frost a cake is about as easy as it gets. If that is exhausting for you, then maybe it’s best to stick to easier things like learning to walk or chewing gum.

    Very pretty. Great tip on chilling the cake. Just watched someone who uses cake strips. Had never seen them before . They male it so you don't get the dark edges that she cuts off.

    For the icing in between the layers can i use whipped cream instead i find that to be less sweet than buttercream, or will it not work and is there any other type of icing you reccommend

      Or you could try ermine butter cream
      It's amazing!
      Ermine buttercream/ boiled milk buttercream/ flour buttercream/ less sweet buttercream
      Just google it and it's so great
      however
      I do recommend you choose a recipe where the sugar is dissolved in the milk
      Rather than whipped in the butter
      Just trust me

      You can use a serrated knife. It works well

      You can easily get a cake leveller in Pakistan , you're probably not crazy enough about baking to look for one 😒

      Mike L would love to know the answer to this. Just finished the ombré iced rainbow cake and there were loads of bubbles in the icing. Hard to shift the icing around too because of the colour constraints.

      Mike L Have you tried dipping your scraper in hot water? It warms it up enough to gently melt the outer layer into a super smooth finish. I use a metal scraper, dip it in the water for about 10 seconds, wipe off the water on a paper towel, and then start smoothing. Re-dip every once in a while to keep the scraper hot.

    fantastic tutorial. removing crusts is a great idea. I did hear of a tip for a way to get soft crusts/edges, by using veg oil to grease your tins before lining sides and base, with parchment paper, not greaseproof. specially with Madeira cakes that take a while to bake ;)
