I'm like a long time viewer of pretty much everyone in the troops and randomly got recommended a video from you about texas barbecue. I am from america and I'm big into BBQ and watching your video in Terry Blacks in Austin was really crazy to me. I've been to that exact location and to see that someone that I watched forever was there was awesome. Ever since seeing that I have been keeping up with the vlogs. Keep doing what you're doing.

The vlogs have me hooked mate, been looking forward to the upload dropping all day. I think it'd be a good idea to have a specific event as a fitness goal like a marathon or even do what kon did for the last charity match, it makes the grind feel more rewarding and keeps you focused.

That BBQ looks really good. It said they USDA beef so that why it seems so authentic. British beef just doesn't have the same fat content to make US style BBQ
So Texas joe was on dragons den years ago. He did a pop up at the grafton pub in Kentish Town for 6 months and used to eat there all the time. He’s a really good guy that runs it too!

As an avid home smoker and lover of BBQ here in the states, I feel that brisket is king. Long hours of love and attention go into making the perfect brisket. From what I can see in the vid the brisket looks overcooked probably done Hot N Fast rather than Low n Slow. Based mainly on the lack of a distinguishable smoke ring (thin red ring of meat near the outside of the brisket) and a proper brisket shouldn't fall apart like that. With Brisket your looking to get an easy pull apart texture rather than falling off your fork just from touching it. This generally means they cooked for to long or at to high of a heat, resulting in too much of the internal fats and tendons being cooked off and not holding it together. With brisket under cooking would result in a very tough piece of meat while overcooking turns it into more of a pulled pork texture, its really that perfect middle ground that makes a great Brisket. Going back and watching the first vid of randy in Texas you can see huge difference in its color and how it holds together on his fork.
Honestly the content from the vlogs has been top tier if you ask me!! Keep it up Randy!! Also since you like bbq you need to come check out Chicago!! We have tons of famous bbq spots here!!!

From how the ribs looked in London they looked really good but it doesn’t beat Texas BBQ in Texas. I have heard from other Brits that BBQ in the UK can be a bit more tough to chew through so I wasn’t sure how it would turn out but it looks good.
Randy, if you ever make the trip to Portland, OR, I think you’ll really enjoy it!
Good thing about randy doing vlogs now is itll probably take his mind off things and encourage him to go out and try new things.
