The thing is "true authentic" for an italian means: "The way my mother or grandmotherm ade it!". Let's take Lasagna as an examble. People in south italy might add peas to it. But if you do that in the north, they might ask: "What the F are you doing?!" So if you use a rcipe of one part of italy and use it tooo cook same dish in another part of italy, it could be that people are making a face like Alessio did when trying the Olive Garden dishes! 🤣 Every italian or at least 1/2 italian know what Alessio means, (even if he adds A LOT of drama to it! :D) But there are still differences between italians, if it comes to "traditional italian dishes"!

Back in ‘88, had been living in Aviano, Italy for 4 years, and we took a month and came back to the states to visit family. My grandma tries to surprise us by taking us to Olive Garden. I was an 11 year old kid but this video accurately describes my feelings for Olive Garden back then.

Some of it good, some of it not so much. One day we went to a Mexican restaurant. It was HORRIBLE. Ketchup on store bought taco shells with ground beef that had just been cooked with a little salt and pepper. I mean, it was terrible. So much so, that I took about two bites and tossed the rest. As we were leaving the really nice owner came up to us to ask us what was wrong. All seven of us said the same thing, "everything." This is how I feel about Olive Garden. It has some sort of form like it might look kind of like Italian food, in really low light, but it has nothing to do with Italian food.

As a Brit, I can cook a full English breakfast that is far superior to what you'll get in 99% of 'caffs' or pubs, but if I wanted Tandoori chicken with peshwari naan say I go to a Tandoori restaurant because I don't know how to cook that. And you need a clay oven anyway to make it well. Home ovens simply don't get hot enough.

As someone who actually likes the food at Olive Garden, I am under no illusion that it is in any way authentic. I’m sure that I would love authentic Italian food as well. My guess is that many restaurants that are run by Italian immigrants to this country and referred to as Italian cuisine are also using recipes that are not authentic.
I have the same with Pizza Hut - I quite like the stuff they sell, but I am under no illusion that it is in any way related to authentic Italian pizza (which I also like a lot).

@JPh-i9l American cuisine is a mixture of many cultures, but I think of it as barbecue, burgers, steak, potatoes about a hundred different ways, stews, Cajun dishes, and soul food. There's lots of confusion around American food because it's influenced by the many immigrants who live there, but there are many excellent options.
I dunno, there are some non-corporate places that try to keep it legit. And even among chains, there are better places than Olive Garde, like Buca di Beppo, or Davanni's.
What exactly are they supposed to protest? Every recipe that exists is altered to suit the taste of the cook or whom the cook is preparing the meal for. That is why recipes can't be copyrighted. Fried Ravioli started in St Louis at a restaurant that sold out and became a chain. However, it wasn't fried, it was cooked al dente and then rolled in buttered bread crumbs and toasted under a broiler. Maranara for dipping. It was called Toasted Ravioli. It was delicious and not at all greasy. Now you can't find it anywhere like the original. I'm really loving the pass fail system here. Mangabile/Immangabile. Magnifico! This is hilarious. I'm America and I agree with Alessio about Olive Garden. And I just discovered I understand more Italian than I thought I did.
I grew up outside of Chicago and this unlocked a kind of fragmented memory. I'm certain my parents ordered that at least a couple of times when we were out. Haha oh wow! Now I want to see if I can make it myself. 😄
That "fried" ravioli, is actually toasted ravioli. It comes from the Italian neighborhood in St. Louis. It's amazing and crispy when done right. Dipped in marinara, and I hate tomatoes, but I like it on this. Places like Walmart still frozen bags you can toast at home. They come from the one small factory "on the hill" in st Louis. It's not actually a hill, that's just what the Italian neighborhood calls itself. Until olive garden started serving them, no one outside St Louis had ever heard of it. So it's authentic Italian food made by Italians in St. Louis. You can get them anywhere you can get pizza or Italian food.
The tiramisu is always exuding some sort of moisture, because it's made in a factory, frozen, and defrosted before serving. It leaks liquid, because of the ice crystals that form while frozen melt when defrosted.
I'll admit it's hard to make GOOD calamari and squid. I am half Greek and whenever I go to see my family in Greece, we go to the beach and the calamari on the seafront is PERFECT. I come back to the UK, it's basically fried rubber...
I love calamari, but the best I've had was at the shore and wasn't fried it was simply grilled and didn't need any dips. I ate most of the appetizer the table was meant to share. Sorrynotsorry😂
I had calamari in Sicily and it was lovely. Not rubbery at all. It was grilled and drizzled with lemon. We recreated it here recently and it was still great. Not rubbery. It’s overcooked when it’s like that. Grilled has a slightly blackened and crispy on outside. No batter it deep fry. Just grill briefly on a hot grill and squeeze with lemon. Yum

We were spoiled when little. If we went out for Italian, we went to a little Italian American restaurant called Papa Joes. Joe was a very round guy who made great minestrone and cooked no Alfredo of any kind. If we ate all our dinner we got a scoop of spumoni (with the little fruits in it) and a big hug. RIP Papa Joe

My understanding is you’ll need to leave the us to do so. I believe US produce isn’t of high enough quality so you’ll find it bland if you made traditional Italian in America. Years of sugar and chemicals that are banned everywhere else has tainted the tastebuds unfortunately. Just being honest
There are a few places in the US but why not just take a vacation in Italy? Not too expensive, not too complicated. Olive Garden has not much to do with Italian food. At all.

Definitely! I've had some very, very good 'inauthentic' Italian-America food in small, family-owned places. A native Italian might complain it's not authentically Italian, but it's definitely authentically Italian-American (which is it's own cuisine that was altered by our ancestors based on what they could find).

Anyone who has ever had the privilege of spending time in Italy, knows that Olive Garden is not authentic Italian food. The pizza served at a gas station/rest stop in Italy, is gourmet by comparison to anything OG serves. 👍😉 Each distinct part of the pizza was exploding with fresh flavor, at the place we stopped at. 😋😋 Proper restaurants in Florence and Montepulciano were among some of the best I have ever eaten at in my life, as well. 🥰

Liquids in Tiramisu- that is because they use chemicals to stablize the custards and the heat and cooling will destablize that custard so that the water comes out.
I love you two and I have started watching other channels too with an Italian and an American. I was married to an Italian for 43 years before he died. I used to think he was crazy because nothing was as good as Italian food. (Real) But after watching Alisio and a few others and living with him for yesrs it’s 💯% Official. Alessio, I can completely understand you're reaction to Olive Garden. I'm a Cajun on both my parent's side, and my mother raised me on homemade Cajun food. So I've had very similar reactions to Cajun food from other restaurants like what you had to Olive Garden. They don't get it. Then again, restaurant cooking is never as good as mom's homemade cooking.

So when it comes to the lasagna discussion, Alessio being from northern Italy would be accustomed to a bechamel sauce in lasagna because that is the northern Italian way of preparing the dish but southern Italians DO use ricotta and mozzarella, the way my mother was taught by her nonna who was from Calabria region. The recipe itself is in her cookbook which came from HER grandmother meaning that the recipe itself goes back five generations from myself, possibly further but my point is that it is not an anglicized or Americanized recipe and it calls for ricotta. All that aside, with Olive Garden it’s the sauce and pasta consistency that kills it… Olive Garden is an extension of General Mills and is as Italian as Taco Bell is Mexican. The only Italians I know who will eat at Olive Garden and not complain are senile.

Bechamel is a French sauce so it’s understandable that it’s used in northern cuisine. I also know of many who use ricotta in a lasagna and I’ve seen it with mozzarella and also cottage cheese, although I know the cottage cheese is not so Italian.
Lasagna is a recipe from Emilia, however southerners decide to do it isn't relevant. Everyone has their own variations on things. You typed a whole load of nothing.

Fried Ravioli started in St Louis at a restaurant that sold out and became a chain. However, it wasn't fried, it was cooked al dente and then rolled in buttered bread crumbs and toasted under a broiler. Maranara for dipping. It was called Toasted Ravioli. It was delicious and not at all greasy. Now you can't find it anywhere like the original. I'm really loving the pass fail system here. Mangabile/Immangabile. Magnifico! This is hilarious. I'm America and I agree with Alessio about Olive Garden. And I just discovered I understand more Italian than I thought I did.

That "fried" ravioli, is actually toasted ravioli. It comes from the Italian neighborhood in St. Louis. It's amazing and crispy when done right. Dipped in marinara, and I hate tomatoes, but I like it on this. Places like Walmart still frozen bags you can toast at home. They come from the one small factory "on the hill" in st Louis. It's not actually a hill, that's just what the Italian neighborhood calls itself. Until olive garden started serving them, no one outside St Louis had ever heard of it. So it's authentic Italian food made by Italians in St. Louis. You can get them anywhere you can get pizza or Italian food.

The tiramisu is always exuding some sort of moisture, because it's made in a factory, frozen, and defrosted before serving. It leaks liquid, because of the ice crystals that form while frozen melt when defrosted.
I'll admit it's hard to make GOOD calamari and squid. I am half Greek and whenever I go to see my family in Greece, we go to the beach and the calamari on the seafront is PERFECT. I come back to the UK, it's basically fried rubber...

I had calamari in Sicily and it was lovely. Not rubbery at all. It was grilled and drizzled with lemon. We recreated it here recently and it was still great. Not rubbery. It’s overcooked when it’s like that. Grilled has a slightly blackened and crispy on outside. No batter it deep fry. Just grill briefly on a hot grill and squeeze with lemon.

The difference is not only from the preparation: frozen and not frozen is the issue.

I am an American from Massachusetts who has been lucky enough to have great food in Italy. I tried Olive Garden once thirty years ago only because some friends brought me there and am sure that I will never have it again.

We were spoiled when little. If we went out for Italian, we went to a little Italian American restaurant called Papa Joes. Joe was a very round guy who made great minestrone and cooked no Alfredo of any kind. If we ate all our dinner we got a scoop of spumoni (with the little fruits in it) and a big hug. RIP Papa Joe

My understanding is you’ll need to leave the us to do so. I believe US produce isn’t of high enough quality so you’ll find it bland if you made traditional Italian in America. Years of sugar and chemicals that are banned everywhere else has tainted the tastebuds unfortunately. Just being honest
There are a few places in the US but why not just take a vacation in Italy? Not too expensive, not too complicated.

There is a huge difference between inauthentic food and food that is not good… I’ve had plenty of inauthentic food that was made well and tasted delicious… thus is low quality, bad food… but if people keep buying it, they will keep selling it
Definitely! I've had some very, very good 'inauthentic' Italian-America food in small, family-owned places. A native Italian might complain it's not authentically Italian, but it's definitely authentically Italian-American (which is it's own cuisine that was altered by our ancestors based on what they could find).

Exactly. If the ingredients are good quality and the food is well cooked, it will taste good regardless of whether it's authentic or not. Just make sure to point out that it's not authentic Italian food (or that it's Italian-American food) and there's no issue.

Anyone who has ever had the privilege of spending time in Italy, knows that Olive Garden is not authentic Italian food. The pizza served at a gas station/rest stop in Italy, is gourmet by comparison to anything OG serves. 👍😉 Each distinct part of the pizza was exploding with fresh flavor, at the place we stopped at. 😋😋 Proper restaurants in Florence and Montepulciano were among some of the best I have ever eaten at in my life, as well. 🥰

Liquids in Tiramisu- that is because they use chemicals to stablize the custards and the heat and cooling will destablize that custard so that the water comes out.
Liquid in tiramisu usually indicates it has been frozen

Alessio, I can completely understand you're reaction to Olive Garden. I'm a Cajun on both my parent's side, and my mother raised me on homemade Cajun food. So I've had very similar reactions to Cajun food from other restaurants like what you had to Olive Garden. They don't get it. Then again, restaurant cooking is never as good as mom's homemade cooking.

So when it comes to the lasagna discussion, Alessio being from northern Italy would be accustomed to a bechamel sauce in lasagna because that is the northern Italian way of preparing the dish but southern Italians DO use ricotta and mozzarella, the way my mother was taught by her nonna who was from Calabria region. The recipe itself is in her cookbook which came from HER grandmother meaning that the recipe itself goes back five generations from myself, possibly further but my point is that it is not an anglicized or Americanized recipe and it calls for ricotta. All that aside, with Olive Garden it’s the sauce and pasta consistency that kills it… Olive Garden is an extension of General Mills and is as Italian as Taco Bell is Mexican. The only Italians I know who will eat at Olive Garden and not complain are senile.
In Sicily, as in other regions of southern Italy, they used what was available, but the original recipe for lasagna includes bechamel, meat sauce (ragù) and parmesan. All the others are regional variations where they used what was once available. Lasagne is a recipe that originated in Emilia Romagna, therefore in northern Italy.

Bechamel is a French sauce so it’s understandable that it’s used in northern cuisine. I also know of many who use ricotta in a lasagna and I’ve seen it with mozzarella and also cottage cheese, although I know the cottage cheese is not so Italian.
Lasagna is a recipe from Emilia, however southerners decide to do it isn't relevant. Everyone has their own variations on things. You typed a whole load of nothing.
