Hi Mark I'm italian and i can only say thank you for showing our cuisine to the world and how deep and diverse it is in every region of our country, unfortunatly our food is often "faked" and low quality products are sold as made in italy ruining the perception of our food in the rest of the world. Hopefully more people will come here and try our cuisine as you did in this journey, the love that you have for the food is noticeable and i hope that you liked everything!

Knew a couple Sardinians back in the day. They always told me I should visit because of the food and culture. This video made me want to visit the island asap. Food looked amazing. I love how serious Italians take their food. It’s heartwarming!

Thank you for spreading knowledge on the italian cuisine in the world. There's so much misinformation surrounding italian food on the internet. A lot of foreigners, especially americans, very often mix up italian with italo-american dishes and I've seen people saying italian cuisine is all the same, just pasta and pizza, and very limited in variety, while it's the exact opposite, being possibly one of the most varied cuisines in the world, with literally THOUSANDS of regional and local specialties. I appreciate that your channel is exploring that variety and letting the world know about it, thanks.
in Italy there are 5200 different recipes not only pasta pizza, each region has its own cuisine with its traditional dishes, sometimes they also differ from province to province they are different. for example in Sardinia they cook dishes that you don't find in other Italian regions. then in our country pasta is only a first course, since we don't eat all the dishes together but staggered, first the appetizer, after the first course which is pasta, and after the second course which can be fish meat vegetables, and a side dish of raw vegetables, while other people eat only one dish which would be like our second course. then in Italy they produce about 320 types of cheese. and just as many cured meats. for example in Calabria they are experts in pork processing, while in Sardinia Abruzzo experts in sheep and goat meat, in Piedmont experts in cow meat,

When I was young, we had an Italian grocer in our neighborhood…really old school…he would bring us in the back to sample some food. He would go back home and bring back amazing goodies…like lemons as big as your head…cheese with maggots in it and divine salami! Miss you Mr. Merola!

If you are still there, you must try Culurgiones, its a traditional fresh pasta dish from Sardinia, a kind of ravioli with a filling of mashed potatoes, pecorino cheese and mint. Sounds a bit strange, but its really delicious. Best enjoyed in a simple restaurant with a simple tomato sauce.

Ah so that's why you didn't get to Sicily .. you were busy in Sardegna!🌊I've been meaning to visit this lovely island especially for the Memorial Giuseppe Garibaldi in Caprera so the food tour you skillfuly planned and presented will turn very useful😋
It's not for everyone, obviously. We have a variety of cheese with maggots here in northern Italy as well. As said in the video, it's actually illegal because it can potentially cause health issues, since the maggots could theoretically colonize your bowels and cause ruptures. It's extremely unlikely, but very dangerous in the rare chance it occurs. Personally, I never tried because I find it disgusting, but plenty of people say it's delicious.
Its kind a same with what i have tried. Mud covered suckling pig and chicken but i dont I dont eat soil. 😁 ill try that with wrapped around foil before putting soil. Great taste.

Then smelling the aroma of backyard garden herbs, wood, & berries roasting underground a succulent pig from a nearby farm. OMGOODNESS!! What a phenomenal virtual barbeque from the best the earth has to offer. Salud to Mark & friends for bringing us such a magical experience from Italy once again!! The mountain areas of Sardinia is one of the 5 Blue Zones in the world (places where people grow very old) It would have been interesting to see what they eat up there...Such a shame you didn't have longer time in Sardinia...I am going there in June and looking forward to all the good food there...Can recommend the Greek Island of Ikaria (another Blue Zone) If you want to taste truly healthy, delicious, healing food. I Went there for a month last year, and the food was amazing.

Mostly all the Italian food is very simple, alot of Seafood and not much meat. It's so different than what people think.
