Ep 36: Burgers from the Wood Fired Oven

  • Everyone has their own way of dressing their burger. I like mine in a freshly baked Brioche Bun.
    Slices of American Cheese. Ketchup. Lettuce. Sliced tomatoes. Some sauté some onions. A few slices of Pancetta. And then dress it with some cornichons,
    For the beef patties I use ground chuck, that has a 20% fat content. 750 grams to make 3 burgers, so each one 250 grams. I like to cook my burgers to medium/well, so to an internal temperature of around 155F/70C, and the 80/20 blend will keep them moist and juicy.

    Nicely done! We do a slight variation here using a burger press, and adding a cup of spices to the meat to the taste of the individual (I like smoked paprika, black pepper, cumin, chili flakes and salt) and that becomes part of the meat itself. A Tuscan grill is used rather than a baking pan, with some hot embers raked forward and another piece of wood or two freshly burning for increased direct heat.
    Gotta say man, your videos consistently hit it out of the park. Hopefully we'll see more of them through the summer!

      Try forming a burger by hand instead of a press. It makes an airy/juicier burger. Ditto on the Tuscan grill!

      @@sergeiiakimenko3648 Not sure about being juicier, but possibly more airy yes. I don't think that was ever a quality I was looking for in my burger patty though! :) We'll add in grated cheese, or if I'm feeling experimental... grated pickled carrots to the patty. These elements impart flavour and texture, but they don't cook the same as the meat and in the end I suppose makes it feel less dense.

      @@DonKomarechka Love the Black Sea! Thank you! Russian but permanently living in the US (away from the mess). I think the burger in US is all about the taste of meat. I understood it when I tried a freshly hand-formed grilled burger. It also helps when the ground meat includes brisket/shortribs. Very meaty. Preformed/restaurant burgers lack that taste hence you may want to enhance the taste by adding other ingredients. Definitely, other cultures/cuisines may influence what you want in the burger.     Great uploads today! When I cook burgers in my wood fired oven I like to place a small piece of mesquite off to the side and let it smolder/smoke while the patties cook for that hint of smokey flavor.

    So I’ve had my WFO for about 2 years now, however in all that time I have only cooked pizza.
    This burger with the rolls and wedges series inspired me to step outside my comfort zone.
    I was nervous about the rolls but the turned out beautiful, the burger was great, and the wedges we amazing.
    Thank you Clive for putting out these videos, they are great quality, entertaining, and they got mr cooking more than just pizza in my oven.

    Few days ago I just started my wood oven season after winter break, and new content from your channel came. Awsome. Waiting for more videos and inspirations. As burger lover IMHO something so beauiful as wood oven burger deserves more care. I would remove ketchup, and change it to proper burger sauce (in my usual burgers its mix of ketchup, mayo, mustard, worchester sauce, little bit of sugar, lemon juice, salt and pepper, maybe little bit of chives). I hope its not only content from your channel this summer. Waiting for more!

    Not many cooking videos make my mouth water, but watching yours, and especially this one, I found my mouth watering... Your videography is just outstanding! I'm sure these take a long time to film and edit, but the final product is a work of art! You are my inspiration to use my oven for more than just pizza. The few times I have, have all been from your content, working on replicating your master pieces. This is another one I'm going to have to try. I believe the wood fired oven will give the burgers a taste you can't get any other way.

    Clive, your videos have been an inspiration and have added versatility to my cooking with fire wood. I have to ask, where did you get your oil cruet. It is beautiful and it dispenses a very fine stream of oil. I would love to get my hands on one, if possible.

    @Clive A video idea for you. Like you, we enjoy our wood oven and cook almost everything in it. A video that would be fun to watch is one where the garlic confit, appetizer, or breads, entrées, side dish veggie and even dessert is cooked in the oven for a party of 6-8 people.

    Great video! Do you always heat up the oven to the same temperature? What was the temperature when you cook the burgers?

      For the burgers I fire up the oven to around 650-700F/340-370C in the center of the oven floor. Then take advantage of the variable temperature between the fire and the oven opening. Thanks for commenting. More to come.

    Any issues of having a grease fire with the such high heat and proximity of the fire and the burger juices rendering? Love the content!!

    Do the foods (potatoes, burgers, onions) pick up any of the fire / smoke flavor? The burger was simple and fantastic!

      I'm not a believer in the fuel you use adds flavour to the food the way that smoking food might. When the temperature reaches above 700F/370C, any moisture in the wood that would impart any flavour evaporates in the heat. I’ve tried different woods in the oven and to be honest I can’t tell the difference when it comes to flavoring the food.
