Ep18: Bone-In Pork Chops with Roasted Potatoes and Braised Fennel from the Wood Oven

- Bone-In Pork Chops are fantastic to prepare in the wood oven. They develop a beautiful golden crust and delicious flavour, especially when you flambé them in some Calvados towards the end of cooking. I serve them with some roasted potatoes, braised fennel, and slices of sautéed apples.
Bone-In Pork Chops
Salt and Pepper
Fennel Powder*
1/4 cup Calvados (or Bourbon or Brandy) optional
*if you don’t have any fennel powder you can toast some fennel seeds in the oven and grind them in a spice grinder.
6 to 8 Russet Potatoes, peeled and cut into large cubes
Olive oil
Sage leaves, chopped
Salt and Pepper
4 Fennel heads, trimmed, quartered and some of the center removed
Olive oil
Salt and Pepper
1/2 cup vegetable stock
1/2 cup hard cider
Thyme
Lemon Verbena leaves (or lemon peel)
1 or 2 Apples, cored and sliced
Butter
1/2 cup Hard Cider
Optional: Skim off the fat from the pan juices and drizzle over the pork. Add more cider if there's not enough, and reduce down for a few minutes.

Between the music your English accent the sound of the fire the sound of the food cooking and the fire itself these videos are relaxing and enjoyable. My only wish is for it to be weekly.

Your food is exquisite, but almost more impressive are you plating skills. That isn't something you learn in a book, that takes a lot of time, imagination, and incredible skill. Having said that, this is my first year with my wood fired oven and I have only had pizza parties (similar to yours) so far. I really want to branch out with some of your other items you have shown. Your videos are the only ones that give me a guttural response when I see a new one. You inspired me to finally build my oven. I built an entire Tuscan outdoor eating area with a huge basil leaf metal pergola (I do metal fabrication and welding), a live edge wood slab communal table, brick oven, etc. I really appreciate your efforts with these videos.

Only tested my clay oven last weekend for first time. Oh lord no!!!! I prefer to cook outside year round and I don’t care if there’s 2 feet of snow on the ground, I just broom the snow away and get the fire going and then get ready for the most wonderful meal!!! There’s really no reason to not enjoy cooking outside all winter long unless your in Antarctica lol 😂

Dude. Another triumph, no doubt, but it would be nice, as you usually feature wine shots in your vids, to know what your wine pairings are with your dishes, and perhaps why? For those of us who first decide on the wine, and then pick the food to pair with it/them!
It was 2014 Domaine Dagueneau "Blanc Fumé de Pouilly". But I also think something slightly bolder, like a Viognier, or even a young Burgundy.

Pork belly the day after a pizza firing using the retained heat. Cooked for around 4 hours....I thought I had perfected it in my conventional oven, the wood fired oven however takes it to whole new heights.

Just the simple little tricks such as the fat turned outward are so important and useful.
I don't have a wood fired oven but have thought about building one. Too bad I'm not seeing any built indoors for extra heat in winter
