We are a bonsai nursery with a large display garden with a small koi pond. We have over 500 trees representing about 100 varieties. We have many rarely seen species. So after mine flower that's when I should remove the ovaries? Also.. should I do this two season in a row before letting it flower again?

Yes Avery remove the ovaries every year rite after flowering. Every season let them flower and then deadhead and prune.
