I drink stale coffee all the time because I frequently buy way too much. LOL. While I can tell the difference, I have found out that any brew method that uses coarse grind will be very forgiving of stale coffee beans. So, when the coffee beans are stale, go for Cold Brew, French Press to Filter.
Try with milk based drinks. I can easily tell fresh vs stale in espresso or filter but very hard to distinguish in a cappuccino.
