I’m data driven so I tamped it. @lancehedrick what’s your position on twisting the tamper back and forth to polish the puck? Asking for a non data driven friend.
I love my Cafec Deep 27 brewers! They are perfect for microdosing, tasting and comparing more than 5-10 different sample roasts, terroirs, processes and varietals parallely without the urge to waste too many beans (and you can drink it ALL without spittin' out!). It is purely fabulous that even with these small doses (5-10g) the intensity, the depth and saturation of the flavor notes in the final cup are just as condensed and well balanced like brewing a perfect 20g dose cup with a fast Orea bottom for example. Fantastic little gadget... And it serves az an icecream cone holder during the summer!
For those interested in doing larger brews like mentioned at 10:50, Chemex does have the larger sized brewer options. The "8-cup" Chemex is my household daily driver for pour over and a 60 gram dose recipe is pretty much perfect for that size.
Happy Holidays to you too! Thought I would respond for the first time, I've been watching your content for just under 2 yrs. now, I have utilized alot of your methodology with very positive results. Interestingly, the 2 methods that have improved my espresso the most was: firstly, spending more on the grinder. This improved my results more than anything else, at least until recently. For a little background I am working with a fairly small budget so I went manual (J Ultra) and the improvement was immediate and significant. The second method you suggested was slow feeding/grinding. Unfortunately, this isn't really practical with a manual grinder. That said, I have tired of the manual life (maybe I am a bit lazy) so when you resently reviewed the Flair Power Tower I impulsively ordered it. I know you were only moderately impressed with it but I decided I could look past the shortcomings (noise and hopper system) because like I said earlier, I'm lazy! My only thought was that it would improve the flow, it would be a time/labor saver. I didn't give any thought to slow feeding until a couple days ago. Suffice it to say I can't go back. What a huge difference! It looks like my flow just got longer again but at least my coffee has jumped to a whole new level! Thanks for all your insights. Level up!!
Always excited to see a new Lance video drop! Making coffee better with science is a double-win. You get all the fun and entertainment of learning something new and applying it... and when you're done you also get better coffee!!!

Just came back from a Japan trip where I saw the Deep 27 A LOT! Bought one for myself and have been brewing with it since - it's really perfect if you like making several single cups over the course of the day ... instead of having to go with 15-20g all the time!
Hey Lance, Andrew from Guam here! I just wanted to say happy holidays and thank you for all the content! You’re the one who really sparked my interest in coffee and got me into pour overs and upping my espresso game :)
Hiya Lance, I'd love to see a video where you triangle test espresso made with no puck prep, just rawdogging form the grinder into the portafilter and tamping Vs your prefered method for puck prep. And then let an "average" person try the test as well. I'd love to see how big the differences are.
I use that sifter from AliExpress for cold brew. It’s really great because it has removed the problem I was having with the filter getting choked by fines.
Lance, Merry Christmas to you and the family! Thoughts from your videos this year: I am happy that I am retired, because with the work flow I have (thanks to you), I would never get to a job on time, if even at all! Cheers!!!
I'd love to see a video reviewing all the non-brewer things that flair sells my understanding is that there are typically better options out there for most of their non-brewer equipment, so maybe adding in some recs on the side of that too?
I thought the Blind sharker was all hype, my WDT needles made my coffee look so fluffy and nice looking, but I bought a Blind sharker (Cheap one) throught Walmart $17 don't know if I'm getting more extraction but for me the espresso tastes as good if not better and I find it cleaner to use less grinds everywhere, plus I don't poke myself, lol :)
Hi Lance, thank you for an amazing year of great content! Re the Weber blind shaker, do you find when you ring it like a bell, the inner sides get dinged up? Anyway, wishing you and your family a very happy Christmas!

thank you Lance. it was great as always. ! QUESTION - is there group head reduction kit for Lelit Bianca similar to one Sworks does for Decent? Merry Christmas and Happy New Year to all!
Hello Lance, I know you're not really into heavily processed coffees but for me they've been a way to get an interesting light roast experience on a cheap espresso focused grinder. I even managed to get a drying sensation with no bitternes on a Switch (15g, 200ml, immersed cold bloom and a single 85 C° percolation pour). Clarity is not a possibility, sure, but the sweetness and juiciness without any bitterness were pretty amazing considering the equipment used. Trendiness and terroir overshadowing aside, such coffees seem to be a little bit of a blessing for people with cheaper gear.
i use a hario switch, with 60 g coffee, ground to espresso size on a mahlkonig x54 ( so around setting 1-2 ), i pour 130 g water, let it bloom for a minute, stir, then add 30 g more water and let it drip unto 200 g heated milk. it makes a very smooth strong coffee. i might go back to a moka pot as 60g per day single source coffee get expensive ! I get through 2 kg a month..
My favorite thing in 2024, by a wide margin, is Kees van der Westen's masterpiece, the Spiritello.... Santa! Oh Santa! Yahoooo! We've got somethin' to talk about...
I like how you used the review of the 10 products for hidden product placement of the sweater that will make you rich. Diabolical plan, my friend, but we noticed. :)
Hey Lance, hope you are doing well. I did a recent mod to an old OXO conical burr grinder. I bought some burrs from Orphan Espresso. Lido replacement burr by Etzinger. Have you ever done mods to OXO grinders? It was pretty much straightforward, but the grind settings is on the coarse area, but now I’m getting awesome shots compared to before. I have the Hibrew H10 Plus.
Interesting stuff regarding bed depth. I feel like I agree for smaller doses, but just like you said, the geometry isn't great for larger batches. For larger batches, I find that immersion method beats pourovers. For a 35g dose, I really like Clever a lot better than V60 or Kalita. I can just barely eke out a 35/500 from the clever, coffee for two no fuss.
Has anyone done a review of Normcore's attempt at a blind shaker yet? I bought one and it kind of works, but wondering if I'm using it wrong? Lots of grinds lost trying to figure it out.
Doesn't fit. But you can hold it on top. The ones i show only currently fit df, as i said in the video. He is making them fit other grinders tho over time.
Cheap solution to blind shaking? Get the MHW-3Bomber blind shaker. It's around $20-25. It's the shaking and the dropping that matter, not the brand itself.

Oh I don't use the sworks. I use the weber. And oh my- many say I'm wrong lololol It's been a year of interesting attempts to discredit me from this alone 🤣
@LanceHedrick haha yeah fair enough, maybe by no-one simply mean I'm not haha. Guess it comes with the territory, bigger you are the more pushback you get. Also lots of people spent way too much money of wdt tools to accept shaking as better so easily ;)
As a coffee geek, the one item I don’t see in these videos is coffee DRINKING temperature. When tasting any liquid; wine, whiskey, tequila, etc. the drink temperature makes a serious difference. But nowhere as much as coffee since it starts so hot. I use an Ember and always pour, wait until 139F, then drink. The coffee you drink straight out of the brew (hot) always, always, always tastes different as it cools. So that spot-on pour over drinks as too hot, too hot, getting there, good, really good, too cold, way too cold. We always see influencers brew, pour, and taste immediately and start commenting. I wince… Why do coffee people put up with that? It’s so easy to do the temperature/taste experiment! I even take my Ember to our local coffee shops to try their new stuff because, well, I like coffee too much to have half (front and back sips) a nice cup have substandard taste simply due to temperature. Cold brew is an exception but as a taste nerd I avoid it because, well, it’s too cold to taste properly. As in tasting beer. Cold beer? Not my thing because I prefer to actually taste it, not have its taste be dampened by the cold. I guess with crap beer or crap coffee, cold is OK because it hides the, well, crap. ANYWAY, sure, brewing water temp matters. But drinking temperature matters more. Much more. Just my two cents! ☮️ Oh, just one more cent…LanceH is one of my three go-to coffee people here on YT!
