  • This lovely moist loaf cake, with lots of mincemeat as well as cherries and sultanas is so delicious. It is a great alternative to very rich Christmas cakes, with the same decadent flavours but a lighter texture. So easy to make too.

    Hey Geoff! I purchased a kitchen weight scale and measure all ingredients in grams. My baking has come out much more consistent than when I used cups, spoons and ounces. I will try this recipe and I'm sure I will achieve the same result as you did. Thanks for this recipe, Geoff.

      I still weigh in pounds & ounces .. cups are for USA . Were in UK so don't even bother with grams ..

      @@susanlee2835 I shall continue to give volumes and measures in grams since the UK now uses metric weights in the main, and in cups etc for those in USA who still mainly work in those measures.

    Oh I am so glad I did not give in to impulse buying at the shop today when I saw this pale comparison of a fruitcake! I was ready for the flavor of one, but it is rare to find a shop made one here where I live. So I will make this loaf and I know I will not be disappointed. It is the season when I will be more apt to find some mincemeat so I am so pleased you have shared this easy recipe! Thankyou.

      HI Julie-joy. I hope you can find some mincemeat. This is a very good alternative to a more traditional Christmas cake, though it is great all year round. Similar in many respects to Bara Brith or Barmbrack.

    I'm going to definitely make this...I NEED TOO.... I'm in a state of SHOCK,,, GEOFF,,, AND HORROR a mouse has got into my pantry and eaten my lovely Christmas PUDDING LASTE with HALF BOTTLE BRANDY I'm really cross this is the trouble with really old saxon cottages AND OURS WAS THE BAKERY,,,( Because of this I keep everything in enamel bins flour ect) ... the little blighters try to move in for the winter... So now OLIVER CAT IS SLEEPING IN THERE LOOKING FOR DRUNK MICE..or a very drunk one 🐁..... . 🐁🐁🐁🐁🐱The cake looks wonderful by the way 👌

      @@geoffsbakingblog oh I know..... and it was your recipe the mouse has good taste... @Oliver just being in there will sort the problem out he's a good mouser... My fear is he's brought it in alive and its took refuge in my pantry which is big so We are taking every thing out and cleaning today.. I can't do with rodents in side at all but I hate killing anything so we are all on the case EXCEPT DOLLY SHE'S HOPELESS.... SHE LET'S THE BlACK
      BIRD@ROBIN IN THE KITCHEN AND JUST SITS WITH THEM WHILE THEY DRINK FROM THE WATER BOWL......

    I watched this awhile ago and went straight to the kitchen to get it in the oven! Just happened to have mincemeat and some old glace fruit I could use up. There is no modern Christmas without some kind of fruit cake and I think this will be a very nice addition.

      Hi Barbara. Yes mincemeat, these days, is a concoction of fruits and spices. Originally, however it was made with meat.

      It's called mincemeat in the US also. Don't think I've ever eaten it. I only seen jars of it for sale in stores.

      Mincemeat is popular in England. We always have it at Christmas period. I will have a go at this loaf tho . I was thinking maybe I could cover it in dark chocolate. What do u think. And make it look like a log lol. For Christmas I mean.

    That's a nice use for mincemeat, Geoff. My go to Mary Berry recipe for mincemeat is a frangipane tart. Hope you're well?

      I often soak mine in brandy or similar, or orange juice. It rather depends on how I want them to taste.

      Hi June. If you make it just as I did it will keep for about a week wrapped in plastic wrap and stored in an airtight container. However if you poke some holes in the top and feed it a little brandy, or similar, it will keep for longer.

    Very nice recipe Geoff and as you say a great alternative to christmas cake. Do you think i can add some brandy instead of milk? Booze might introduce more the Christmas spirit!😂

      Hi Daniel. Thanks very much. Yes, if you need wish to loosen the batter you can add a little brandy. You can also poke some holes in the top after baking and brush some brandy over the top.

    Hi Geoff, I love the look of this recipe, I LOVE making mince pies, so I go crazy every Christmas buying every different jar of mincemeat I come across in the shops and end up with about 10 jars in January! I always have cherries too so this will be perfect for me, I’m going to make it at end of November so we can enjoy it putting the tree up on 1st Dec. Does this have a good shelf life?…..I tend to add some whiskey or brandy to my mince, so that will help me do you think to slacken the mix a bit? ….Your cake looks so beautiful, can’t wait to make it…..thanks so much Geoff, who needs Mary Berry when we have you! xx💕💕xx

      Hi Delilahboa. I am glad you like the recipe. I think, if your batter needs to slacken you can use whisky or brandy instead of milk. You can also make a few holes in the top and brush a little over the cake once it has baked. I made this a week ago and am still eating a slice every day. With some alcohol seeped into it it will keep even longer.

      Hi Jean. The only milk in the recipe is a little, if needed, to loosen the batter if it seems too thick. You could use orange juice for that. If, though, you meant could you use orange juice instead of the eggs, I am not too sure how that would work, but certainly you would need more raising agent of some sort. . The batter will make good muffins, though they should be baked for a shorter time.

      Well I did it 😊 no need for extra liquid , but as I had got the juice ready had a nice drink while they were baking, but I did add the zest to the flour. They took 25 mins, now it’s a quick lunch of a muffin and cheese , hope my hubby enjoys them in his lunch tomorrow, thank you 🥰

      I think that would be no problem, just check them after about 20 minutes, they would bake a lot faster than a full cake like this, I’m just not 100% sure just how long they would take 😊

    Made this many times, gets rave reviews, but a quick question. Why do you specify unsalted butter, but then add ½ TSP of salt?

      Hi Moss. I am glad you are enjoying the cake. In baking the butter used is often unsalted, and then has salt added in. The main reason is that you can control the amount of salt like that. Butter that is already salted is likely, or may have, different levels of salt depending on the brand bought. However if you only have salted butter use that and omit the salt specified in the recipe. The reason for salt in baking is actually to draw out the flavour of the other ingredients, rather than to impart a saltiness.
