I also often strive to making fluffy, sponge dough of chiffon cake (professional designation). You can also cover the cake with chocolate glaze and use steamed out poppy seeds instead of dried fruit.
The secret to your cake's moistness and richness is brown sugar. Since it contains molasses, which is also antistaling agent or substance, preventing staleness of confectionery and bakery products (like as properly sugar (esp. in gingerbreads) - Sugar itself is an antistaling agent, so molasses also complements it in strength (it also moisturizes)).🧐🤌👍👍
