Quick tip, place the fried fish either flat on the cookie sheet or foil WITHOUT paper towels to air dry and they will remain crispy on both sides. Paper towels will make the side that the fish are on soggy due to basically retaining the steam and not letting it air dry. In Alabama we call that big Shad a gizzard Shad. It is the best cut bait for catfish, in a river on the bottom. Try it sometime. Use a #6 or #8 hook on the bottom. We fish below dams in the spring. My biggest was 72lbs many years ago.

It's a texture thing i think🤷♀️ What is the best setup for fishing catfish, bass etc...I LOVE fishing & don't usually catch much. But I'd love to get better by knowing the best setup & bait. TIA😊

For a better cook, cut the tail half from the shoulder half of the filet. Cook all the shoulders in one batch and the thinner tail pieces second!
