    촉촉하고 부드러운 프랑스 디저트 플랑 빠띠시에 오 쇼콜라를 만들었어요~
    바삭한 타르트지에 달콤한 초콜릿이 들어간 커스터드 크림을 넣고 구운 뒤 차갑게 식혀 먹는 타르트인데
    촉촉하고 부드럽게 입에 착 감겨서 계속 먹게 되는 맛있는 타르트인 것 같아요~*^^*
    틀 아래에 틀 보다 큰 유산지를 깔고 타르트 시트를 팬닝하시면 굽고 옮기 실 때 편하답니다~

    ▶틀 사이즈 Mold size : 15cm x 4.5cm
    ▶재료
    달걀노른자 7g
    우유 12g
    박력분 70g
    코코아파우더 7g
    설탕 10g
    소금 1g
    무염 버터 55g
    다크초콜릿 75g
    달걀노른자 60g
    설탕 60g
    박력분 10g
    옥수수 전분 12g
    뜨거운 우유 250g
    뜨거운 생크림 75g
    ▶레시피
    1. 달걀노른자와 우유를 섞어 둔다.
    2. 볼에 박력분, 코코아파우더, 소금, 설탕을 넣고 섞은 뒤 무염 버터를 넣고 버터가 밀가루와 섞여 작은 크기가 될 때까지 섞는다.
    3. (1)을 넣고 섞은 뒤 넓게 밀어 펴 냉장실에서 30분간 휴지시킨다.
    4. 틀에 반죽을 넣고 모양을 잡고 냉장실에 넣어 둔다.
    5. 볼에 달걀노른자와 설탕을 넣고 섞은 뒤 박력분과 옥수수 전분을 넣고 섞는다.
    6. 뜨거운 우유와 생크림을 조금씩 부으며 섞은 뒤 냄비에 넣고 약불에서 걸쭉해질 때까지 저으며 끓인다.
    7. 불에서 내리고 초콜릿을 넣고 섞고 틀에 넣고 평평히 한 뒤 170도 예열된 오븐에서 35분 정도 굽고 실온에서 식힌 뒤 냉장실에 넣어 차갑게 식힌다.

    7g Egg yolk
    12g Milk
    70g Cake flour
    7g Cocoa Powder
    10g Sugar
    1g Salt
    55g Unsalted butter
    75g Dark Chocolate
    60g Egg yolk
    60g Sugar
    10g Cake flour
    12g Corn starch
    250g Hot milk
    75g Hot whipping cream

    Commenting because I have made this twice. First time I didn't realize the size difference (dumb of me) and ended up making a very thin tart. Second time I doubled the recipe and used a mocha ganache to glaze the top. Really a beautiful and recipe, proportions are exact and both tarts were excellent.

      @@ΜαρίαΠαππά-σ8ο it's not sweet but it's also not as bitter as dark chocolate. The pastry is very tender and the custard filling is rich with a firmer pudding texture. It has an adult chocolate flavor. Hope that helps!

      @@__pallavi__ I used a scale to measure, but you can Google conversions of weight to grams for every ingredient. 7 grams of egg yolk is about half an egg yolk, not much at all.

      Danielle Angel thank you! Not trying to whine, but god it's so frustrating to always convert grams to cups for each ingredient of each recipe I want to try. I understand that cups aren't a very accurate (but very weird) unit of measurement though. Oh well it's about time I invest in a kitchen scale!

    쿠킹트리님 레시피 감사합니다 케익 만들어서 병원 언니들하고 나눠 먹었는데 많이 달지않고 맛있다고 했어요 저도 만들면서 어떨까 궁금했었는데 역시나 기대를 저버리지 않았네요ㅎㅎ 제과기능사시험에서 번번히 떨어져서 자신감이 떨어졌는데 지금은 굳이 자격증이 필요있을까 싶네요 만들어서 맛있게 먹고 만족하면 되지않을까요? 다른 레시피 따라해보고 다시 오겠습니다 항상 감사합니다 꾸뻑^^

    I tried this recipe a few days ago and it worked out really well. The only thing that I didn’t do, was sieving the dry ingredients, I don't know if that's partially the reason for the lumps in the filling batter 🤔

      This reply is so late, but yeee,,,
      I think it IS the reason why there are lumps. Because "sieving" is the technique bakers use so that there are little to no lumps formed when dry and wet ingredients are mixed together:D

    어제 요걸 해봤는데 크림이 무거워서 그런지 무스틀에서 분리하다가 타르트지 밑판이 그대로 홀랑 빠져서 크림이 다 탈출하더라구요ㅜㅜ 무스틀보다 타르트팬에 높이를 낮게 만드는게 나을거같아요~ 그래도 맛은 진짜 🖒🖒🖒

    프랑스사는데 파티세리에서 Flan pâtissier au chocolat 보다 바닐라 맛만 나는 클래식한 Flan 만 주로 팔아서 맛을 못봤는데 Flan 질감에 초코맛이면 정말 맛있을거 같아요 ㅠㅠ 이렇게 레시피로 올라오니까 한번 해보고 싶어지네요 ㅠ

    I really like to watch you cooking, baking! I am gluten free and I wish some of your recipes like this I could use gluten free flour but I guess is not going to be the same!! Maybe I will try anyway!

      I can't eat gluten or dairy, and I have successfully made many of Cooking Tree's recipes (like roll cakes and cheesecakes), simply substituting flour for gluten-free plain flour (usually a mix of rice and corn), and exchanging milk for soy milk, and cream for coconut cream. I also use store-bought vegan cream cheese (which usually has coconut oil as the main ingredient).
      I have not had to change the quantities or anything, and they end up tasting great.

    계란 노른자를 위주로하는 베이킹에 경우에 쿠킹트리님은 남은 흰자를 어떻게 효율적으로 처리하시나요? 항상 베이킹할때 흰자위주로 쓰는 레시피는 노른자 처리가 난감하고 반대의 경우도 어찌해야될지 난감하네요.. 또 노른자 몇그램 이렇게 되있는데 노른자 하나당 대충 몇그램 정도인가요? 그램으로 표기되어있어서 노른자를 분리해서 계량하고 남은건 어찌해야되는건지.. 팁이 있다면 알려주세요!

      달걀의 크기에 따라 다 다르지만 노른자 1개가 약 20g정도 되는 것 같아요~
      흰자가 남았을 경우 비스퀴 시트나 다쿠아즈, 머랭쿠키를 구우면 좋더라구요~^^
      노른자가 남았을때는 커스터드 크림에 활용해도 좋답니다~

      You could use the egg whites as a face mask! The protein is very good for your skin. You put it on you face wet, and when it dries, you wash it off 😊

      No cake flour is flour with a smaller gluten content. I would recommend pastry flour if you can’t find cake flour

      pastry flour and cake flour are the same thing but all purpose flour is completely different

    어머 넘나 맛날것 같아요.

    다시금 생각하게 만드는 디저트
    네요.커스터드가 들어가서 부드러운
    입에서 사르르녹을 것 같아요.
    진한 초코가 들어가서 달콤함은
    말로 표현 못할 것 같아요.
    무스틀이 없는데 그냥 원형틀에
    구워도 될가요.
    15cm 높은틀에 해도 될까요?
    꼭 해보고 싶어요.

      무스 틀에 굽는게 분리할때 편하더라구요~^^
      분리형 원형틀을 사용하시는게 좋으실 것 같아요~~

    I put the correct measurement but my crust dough wasn't that crumbly and and flan mix WAs too runny.... let's see if it cooks now or else I'd be sad to waste chocolate:/
