Yep. The PS1 could render more polygons per second and could also store far more data on its disks than the N64 could store on its cartridges. So you'll see more varied and sometimes more detailed textures. Edit: and obviously much better on an emulator and modern PC!
The only thing the PS1 was not good at was the texture warping glitch (although it's become desirable for some). Much of it was because the texture scaling was done with integers instead of floats so the numbers were rounded off.
This game looks like how they envisioned ps1 to be programmed I think: Polygons with textures for background, spite based enemies and items, other neat tricks like layered fog and stored live action video files. The Sega Saturn was kinda made based on this too, though with more of an idea of 2D level design (as in a more realistic 16bit like platformer). (I could be wrong though). Was this included with the playstation? I know it was on the included demo disc. I also know I owned the game but never made it further than I did in the demo anyway.

For a PS1 game it looked really good. Insomniac has always known how to utilize the resources of a PlayStation
