I have a lefse griddle and lefse rolling pin. Do you believe I could use both of those in making this recipe? The notches are not quite as deep on the lefse pin, so I believe I could supplement with a fork as you've shown, but I am mostly curious about the griddle as opposed to the oven? What are your thoughts: must the bread be baked?
At the end of the video you said the hole was to hang it to dry in the attic. I assume that the crispbread I buy at the store was dried since it lasts for a long time. How do you dry yours or do you just eat it within a few days? If we wanted to try to dry it do you know how long and what temperatures?
The thing is knäckebröd made with 100% rye doesn't go stale, so once it's cooked out of the oven, they'd just hang it as it is and leave it there until needed, maybe for a year or more. If the room is dry (not particularly dry, just a regular room dry), then it doesn't go stale or mouldy

When I bake knäckebröd at home, I use 100% rye and no cream, and so far it has kept for two weeks at least without problem (not longer because I ate it all lol)

Hello, Wanted some clarification on timing of resting dough. Video mentioned resting dough 1 hour then showed kneading then mentioned resting again for an hour. But written instructions say only 1 resting for only 20-30 minutes. Q: Can I conclude that after dough is mixed in bowl, it is then kneaded, and then should rest (once) for 30-60 minutes before rolling? Q: Also yeast measurements? I'm assuming is 1 1/2 Tbsp. not tsp. as written? Q: lastly Could I use milk instead of cream and water, maybe add some butter? Thanks 👩🍳
Yes, I think that this kind of crispbread will be delicious with some butter and little chunks of smoked salmon, indeed. Very nice and interesting recipe, I have to say. So as always thanks for sharing this 👍

You can buy from Ikea very cheap. Their crispbread contains only Rye flour, salt and water. I don't think you need cream, milk or yeast.
