Chocolate Mousse Recipe

  • Chocolate Mousse - an elegant, smooth, airy and chocolaty dessert. This is a dessert served in many restaurants and may seem complicated or sophisticated. Don't be afraid to give this chocolate mousse a try, it's not difficult at all. Actually it's quite easy and will surely impress your guests.
    Ingredients:
    Makes 2-3 servings
    5.5 oz (150 g) dark chocolate
    3 eggs, separated
    3 tbsp (50g) butter
    1/4 cup (50g) sugar
    flavors - you choose (rum, orange, zest, lemon zest, mint, etc)
    Directions
    1. Melt chocolate over a bain-marie until smooth. Add butter and incorporate until well blended.
    2. Whip egg whites until foamy with a mixer and gradually add the sugar whipping the whole time until it holds very stiff peaks.
    3. Beat the yolks with your chosen flavor ingredients, add to chocolate mixture.
    4. Fold in a spoonful of the whites into chocolate mixture then pour chocolate into the remaining whites and fold gently until well combined.
    5. Pour the mousse into serving bowls. Wrap with plastic and refrigerate few hours or overnight. Decorate if desired before serving.

    I did this and turned out great! super delicious :) ..
    1) just make sure that the melted chocolate & butter is cooled down (not cold just not too warm/hot) before you put the egg yolks into it
    2) mix and fold for dear life until the consistency is as shown in this video :D

    Just made the recipe for dinner and my family loved it! Topped it off with some whip cream and it was irresistible! For those of you worried about the raw eggs, I had no problems at my end. This recipe is SUPER easy and fast to make, recommending it everyone :) !

    MAKE SURE YOUR CHOCOLATE MIX COOLS BEFORE ADDING EGGS BECAUSE I HAD SCRAMBLED EGGS THEN 😰😂

    I made this. I screwed up though; got it all done, folded the chocolate into the whipped egg whites, put into ramekins and refrigerated. Was cleaning up the dishes and realized I forgot to put the 3 egg yolks in!!!! It was still good!!!! I'll remember next time!!! 😋

    definitely works . just have to whisk longer than shown in the video . i used dark chocolate with 70%cocoa .. crumbled up a bit after adding eggs but when I poured it on the egg white mix ,turned out perfect. tastes out of the world. and by far the brand easiest recipe . go for it guys word by word . It's really great

    Since a long time i have been researching on how to make a chocolate mousse though i knew ur recipe, despite having a first trial, results would be good. Yes it came out perfect. I cut the recipe into 3 and made it with only 1 egg and replaced the orange zest with 1/4 tsp granulated nescafe. Sooooo yummy.
    Ingredients:
    50g dark chocolate (54% cocoa lindt swiss classic)
    1 Egg
    17g Butter
    15g Sugar
    1/4 tsp granulated coffee
    Freezed overnight

    Why do people freak the hell out about raw eggs? She wouldn't show you the recipe if it kills you!

      Because salmonella can be transmitted by eggs, meats, etc. People freak out because of that well I believe that is why they might freak out. Not sure just my thoughts. Doesn't mean I will stop eating eggs or meats any time soon lol

      eggs sell in stores are all pasteurised, so the risk of getting salmonella is basically zero. i don't get why people freak out. you should only be concerned if you are eating raw eggs that you got directly out of the chicken's butt lol or from a farm market or something

    My French mother taught me a recipe which is very closed to yours. She did not add heavy cream as many recipes shows it on the web. She used butter like you. But she did not add lemon zest and sugar either. She just added Grand Marnier or rhum. That makes the taste of the chocolate stronger and that replaces the sugar.
    She was very successfull thanks to this recipe, and me too !

    I made this using a natural zero calorie sugar, monkfruit, and popped it in the blender so it was powdered and not grainy, and added it to the chocolate (since I wasn’t sure how it would effect the eggs). It was SO good!

    Just one quick tip; If someone is beating egg whites with no signs of stiff peaks like it happened to me, then dont panic. If there is any kind of residue or fat in your bowl from before then it really won't become stiff and stay runny no matter how much you beat it. Happened to me while making this for the first time and google helped me with this answer. As soon as i started all over again in a clean bowl, bang on! Stiff peaks formed within 2 minutes. hope this would help someone if such thing occurs.
    My mouse is in the fridge, cant wait to try xx

    Made it today and it was so simple and good. 20 minuts long (including dishes) The texture is exactly what i look for ! I didnt use any butter, my chocolate wasnt "that" dark. Thank you for your recipes !

    I was sceptical at first, cause it seemed to easy to be true, plus there are hardly any ingredients! But gosh was I wrong!!!!!! Iv tired different kinds of mouses, n somehow was never happy!     Everyone should stop complaining about the ‘raw egg’ in this recipe. 99% of chocolate recipes contain raw eggs. This is an iconic French dish and is far beyond reproach. This is a great video and channel. Also, there are plenty of alternatives. You can use pasteurized eggs, or you can cook the egg whites over a Bain Marie until a thermometer reads 160 degrees F. Also the yolks are cooked which reduces the risk of food poisoning by tenfold. Also, according the FDA, only 1 in about 30,000 eggs are infected with salmonella each year. Stop complaining

      Nusaiba Shafi it’s called heavy cream, a lot of chefs make mousse without eggs, that’s very common.

      @@piffpete420 If you're not using eggs it's not mousse. It becomes fool or something else like posset or syllabub depending. Mousse is made with eggs.

      I have done both with raw eggs or a bit cooked eggs. You put a pan with water and then another pan with eggs over it in Bain Marie. You keep mixing while the water starts to boil and take it off just when you feel it is getting tick. Continue right way beating eggs in the blender. Some find it safer that way.

    i juuuust made this and tried it and its seriously the perfect texture. one thing i wish i did was buy a better tasting dark chocolate because the flavor of that shines through over everything else. make sure yall buy your FAVE dark chocolate for this perfect recipe. i put raspberries on mine and its was the best.

      Elif Nur Yıldırım It wouldn't taste as rich -- you're cutting out a lot of the fat by omitting the yolks. You'd probably notice the difference if you've ever had traditional chocolate mousse.

    Looking for an alternative to whipped cream frosting for my cakes, I stumbled upon your video. Was wondering if this mousse can be used as an alternative to whipped cream to frost cakes during this lockdown period. I will be really grateful if you helped me out.

    Love the recipe! But if preferred to eat more safe, heat up the egg whites and egg yolks to 60°C, that way they are pasteurized and free from bacteria and other bad substances. Happy Dessert

      Ester Castro The eggs would only be safe if the temperature of 60 degrees is maintained for at least 30 minutes. If you are warming the eggs to 60 degrees and then cooling them. You are speeding up further bacteria growth by keeping foods within the dangerous temperatures of 5 - 60 degrees.

      Actually it is 1 hour and 15 minutes at 57 degrees Celsius. You can do that with sous vide.

      Sidra Rani I'm well aware of eggless mousse but, I hardly doubt some unflavored gelatin will get you the same result. You won't get the same texture. Also, I wasn't aiming at your comment for eggless mousse, I actually meant that you didn't want raw eggs and tried to point out in a sarcastic way that raw eggs aren't unsafe and they don't worsen the taste. Hope this clears your confusion and I apologise for my previously rude comment, I'll take it down.

    Great tutorial! I really liked the fact that you made this recipe using easy ingredients that everyone probably would already have in their household. Also, about the chocolate, does it have to be the chocolate specifically made for baking/desserts, or can it be a normal store bought chocolate that everyone goes for? e.g. Lindt ( that's what I have on hand right now) From your experience, how long do you think it takes to get stiff peaks? Thanks so much, I love all your recipes and they are always so easy to follow :))

      in Europe we have no problem using raw eggs in desserts.. like Italians use in Tiramisu.. they are really delicious

    Ive made many different chocolate mousse recipes and this is by far the best. I used 60% cocoa and it was mmmmmm. Going to try half milk chocolate and half dark next. Requested from my daughter. :)

    A long time ago, my dad used to make me some boxed mix of almond mousse. Could you try to make it? From what I recall, no chocolate or anything else. Just almond flavor lol. Whatever it was, it tasted so good. I've never been able to find it again.

    I do not know why people wonders if the eggs are not cooked, I always made cake like this and not only this but also the tiramisu and all the other cakes that are not baked, and never had a problem,,, People do not be afraid, most cakes are now saved with uncooked eggs especially because sitting in the fridge for a few hours or the whole night.This is my opinion, but everyone should have the right that it wants to...
