He's not some Redneck - he was a Major and a specialist. For God's sake. Notice over time how the producers encouraged Major Hiddens to speak more broadly. If you see him interviewed away from this show, his voice is different - educated and gentlemanly. I hate media.

I loved this show so much when it was shown here in the UK, I think in the late 80s on channel 4.I looked forward all week to the next episode,those were the days before TH-cam,Netflix and the rest lol. I'm thinking a young Ray Mears and Bear Grylls both watched it in the UK
Yes i looked forward to this to, Ray Mears did a program with Les Some time back. The Bush Tucker Man is the best of them all. So glad it was shown back then.

As much as I love this guy and I really do...he always seems to focus on nuts, seeds, berries and the like. If you're going to survive in the bush for extended periods you need protein...that is meat... a kangaroo, wallaby, a snake, crocodile...some big animal to cook up over a fire....why don't we ever see Les cook a big animal? There is no way in hell anyone would survive eating berries and nuts....foraging is one thing...hunting is another.
Probably because its obvious. Everyone knows you can eat meat. His job was to gather info and document available native foods for army survival. Running a butchering course for animals we already know are edible isnt in the scope. Locating and identifying plants and in what season they are available is far more important and so thats where he spent his time.

Considering he was a private in 67 and a captain in 85 it doesn't seem unreasonable that he would be a major in this a few years later just before he retired in 89.
