    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the TH-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via TH-cam videos, her cookbook, and cooking classes.       i think indian basmati rice would be good for this fried rice because they do not needed to be freezed for it to get seperated.
      each one is already seperated

      This is awesome. However, I still think using good old kana or kailan is the best. And a trick which my mum always insisted, is to crank up the heat to as high as possible and then drizzle the soy sauce fish sauce down the side of the wok so they sizzle and the flavour gets maxed out.

    I’m half Thai and I make mine with pork and tomato.
    I marinate the pork overnight in Thai soy sauce, fine black pepper and garlic powder.
    I use almost all the same ingredients that u do except the black soy sauce and cook it in the same order that u do except that I put the tomato in last and cook it for only about 30 secs to 1 minute so it doesn’t become too soft and squished.
    My husband is American and he loves it.

    Alot of Nigerians love basmati rice they cook with and it tastes so good when they make it basmati rice to make jollof rice it tastes 100% good .

    I learned a lot from you today especially cooking the stems with the onions before i would discard the Kale stem never Thought off using it and very cruchy to i will cut it up and add it next time for sure thank you Pailin.

    Lol I ate this growing up and always wondered why it tasted different but better than all others I had. It wasn’t until last week I learned cuz it’s Thai lmao. I’m going to cook this.     I did this one yesterday before I was watching your video. Only mistake I did what that I had to much soya sauce, the rice became to dark.
    But the taste was still delicious.

    Nice and easy recipe, my Thai gf begs me to cook this at least once a week. Funny thing I am from Vancouver living in Thailand learning to cook Thai food from a Thai living in Vancouver. I have tried some of your other recipes (spaghetti kee maow) which I love too, I look forward to trying even more, kob khun krub!!!

    Hi this might be a random question but what gas cooker do you use to cook this with? I don't have a gas hob but what you are using here looks perfect. My electric stove sucks lol

      Hi Vanessa! If you want to ask her directly use one of the links under "Show more", but I've asked her this before and all she remembers is "somewhere in (Vancouver) Chinatown". Woks come and go so fast though, so as long as you stick to the concepts - thicker, flat bottom, helper handle, no coating, etc. - you should be fine :) She also has one in her Kit here kit.co/hotthaikitchen/kitchen-tools-i-use - but again they come and go so fast and we have to keep changing the link.     Thank you for showing us how to cook Thai fried rice This is my favorite dish to make and it was better tasting when I followed the recipe. I made mine with no meat just the aromatics garlic onion tomato & green onion plus the sauces and a fried egg on top. Like u said b4. It made it Thai and very addicting.     nice recipe but adding too many sauces is really headache for me. i tried it with my indian touch and that is spices and it turned out super delicious
    i love my indian cooking because of spices and not the sauces for flavour.
    spices are healthy as well as makes the dish wonderful.
    for example turmeric,cinnamon,clove etc.
    but i wonder why thai dishes have no spices???
