I made these tonight and .... wow, they're incredible. It's a hearty, substantial donut, unlike the dainty, light Krispy Kreme donuts. The recipe itself is so simple, it's really hard to mess these up. It also tastes a lot like the ones I ate in Hawaii. Thanks Relle!

Hi. -I've always just used the milk as I pull it out of the fridge and have been successful. -You can 2%. The more fat content in the milk the richer the flavor. -I prefer bread flour. Higher protein content, more gluten, better chew. In a pinch if all you have it all purpose flour it will work as well. -I start the mixer on low to prevent the flour from flying all over. From there I don't usually go higher than medium speed. -No exact size needed on the cookie cutter. I'd say about 3in should be good. -Dough should be about 1/2in thickness. -Any mild flavor oil will work (vegetable, canola, etc.).
Relle, was craving/missing the flavors of Hawaii and decided to try your recipe! The malasadas came out beautifully-light, fluffy, and very tasty! I usually “cheat “ and do the pilsbury method but why do that when this is easy and tastes so much better?! Family approved!
Hey Nice Repice i tried it and my Dough turned up Really Sticky ? i did use the recipe and didnt change anything could it happen if the dough is not enough kneaded or is it a problem whit the Flour i used 405 (german Flour) it is a really smooth flour
The dough is slightly tacky. If too sticky, simply add a little more flour. I suggest using bread flour and keep kneading. It will come together. Hope this helps.
aloha,i followed your recipe to the tee bt after resting it for an hour to double in size,my dough was wet..i added little flour @ a time but it still wouldn't form to a texture to where i could cut dough with my cookie cutter,it was just to wet..please advise on what i could be doing wrong.thank you🙏🏽

Not sure what I'm doing wrong. I don't have a stand mixer so I used a hand mixer then kneaded it by hand, but my dough baby didn't look look wet and sticky like yours 😓. I'm also converting cups to grams so it possible that there's too much flour? Idk 🤷🏻♀️
Sounds interesting :) How about adding to the rolling in the sugar step: lemon powder (“yours” brand) or maybe a lemonade powder drink powder but adjust the sweet with your preferred granulated sugar additions.
Do you have unsweetened condensed milk? I have not tried it with anything else. Evaporated milk has most of the water removed, so if regular milk is used in it's place the amount may need to be adjusted.

You could, but you also don't want them to over proof them. You can slow the process down in the refrigerator if you'd like.

Bread flour gives it the classic bread chew. I prefer bread flour but in a pinch you can use all purpose flour.

With a stand mixer 5-10 minutes.

If the dough is too wet that means too much liquid or not enough dry ingredients. You can always add a little more flour and continue to knead.

You can use either or. The instant will dissolve fast and give it less of a yeasty taste.

It is dry then that means too much flour. You can try to add a little more liquid to see if you can get it to the right consistency.

I trued several times to do these but 375 browns the outside n the inside is not totally cooked every time on my electric stove.
Cooking appliances vary. If the outside is cooking too fast lower the heat and let it cook for a little longer.
Fun fact: Neither in Porto nor in Lisbon they have heard about Malasadas. They are called Bolas de Berlim (Berlin balls)

Bread flour has more proteins and therefore more gluten which makes a more chewy consistency. You can use AP flour it would just change the texture.
