In the last recipe with the ground beef, tomatoes & cheese, I see others are unsure about the pickles, but it reminds me of a dish my family made when I was young. The pickles were sweet, pickled with clove and allspice- and they were delicious with the beef, onion & tomatoes. The cheese we used was an orange cheddar. I say, don’t be uncertain about the pickles. Try them! You could also use sweet pickle relish instead. It’s a great combination. A pinch of red pepper flakes, salt & coarse ground black pepper will also perk up the flavor a bit.

When I was a child, growing up, my mother used to make breaded fried eggplant that was so delicious.
Oh mine did too, i loved it. My mom used to fry breaded squash too. Ah the good days as a kid.
