Fluffy Kabocha Squash Bread Recipe

    [Ingredients]
    1/4 kabocha squash (net wt. 130g)
    250g bread flour
    3g salt
    30g cane sugar
    3g dry yeast
    100ml< lukewarm milk
    30g heavy cream
    20g unsalted butter
    [Instructions]
    ◎kabocha paste
    1. Remove the pumpkin skin and cut it into bite-sized pieces.
    2. Put them in a heat-resistant bowl, cover with plastic wrap, and heat it in the microwave(500W) for 5 minutes.
    3. Mash the kabocha finely.
    ◎dough
    1. In a large bowl, put all dry ingredients and mix. Add milk, heavy cream, and kabocha paste and mix well. Add milk to adjust the firmness of the dough according to the moisture content of the kabocha paste.
    2. Transfer the dough onto a kneading board, and knead it until it becomes smooth. Add butter, and knead it until it becomes elastic.
    3. Let the dough rise until doubled in size.
    4. Gently press the dough to release the gas in it. Divide the dough into 3, shape each dough into a ball, and give the bench rest for 10 min.
    5. Roll out the dough into a rectangle. Fold the long side toward the center. Roll from the end of the short side. Pinch the end of the dough with your fingers to seal it. Place the rolled dough into a butter-greased loaf pan.
    6. Cover it and let it rise until it rises to the height of the pan.
    7. Bake in the oven preheated to 190°C/390°F for 20-25 min.
