    Much thanks to you and the team. For years I' ve been watching the big chefs programs on cooking in the world. What I have noticed is that when they are inspired by a special cuisine (like Turkey's dishes) they do not use it or mention it as a reference. I used to think that we should do programs in english as well in order to show the world that Turkish cuisine is much more bigger than kebabs. Bravo to you all.

    Finally, a cabbage recipe that is easy to make and looks delicious. Kind of a deconstructed stuffed cabbage recipe from Poland. But a lot less time consuming to make.

    Up until you added parsley and parmesan, I was telling myself "Ohhh! This is kapuska without lemon and crushed chilies." In any form cabbages are one of the best things we can eat for a good immune system and good eye health.

      This isn't low calorie; there's a lot of fat, which is where the calorie load comes from.

    brilliant! we usually make cabbage dolma in palestine, and i often complain about the excess cabbage we have that we keep freezing and never doing anything useful with it :') you are officially the first person i've ever seen who uses cabbage as pasta, totally inspired me now! thank you for sharing!

    Yotam Ottolenghi prepared an eggplant tahini pasta yesterday well worth Refika's and Turkey’s attention. Between Refika, and Ottolenghi (as I notice in comments I am not the only one reminded of him by Refika), Turkish home cuisine is bound to creatively evolve with its traditional ingredients and techniques intact. I don’t have every Ottolenghi cookbook yet, though from those I do have, they don’t date and flavors traditional in Turkey are everpresent. Hoping Refika publishes and visits as a guest home chef, to charm and delight, endearingly maternal, covering the rising dough with a cloth “to keep it from catching a cold”. :D

    Selam Refika,
    I am writing you while having a plane pizza with mozzarella and potato. It is a wonderful alternative, cabbage with minced meat.
    However, for us, it is hard to find minced beef or chicken in Italy. We usually get minced pork. We, normally mix the sauce(any kind) completely with pasta but I get to watch on Turkish series that you guys don't mix sause with pasta when you eat pasta. You guys have them separately. Take care you guys too😘😘

    Well, I am not really a cabbage fan though I eat it some times as I know it is good for health - in Greece we say cabbage is the medicine of the poor - but this version of it triggered my taste buds so I will try it... After all it seems magical seeing how much weight you have lost...! Great job Refika, keep going!

    You look great .. but weight loss is important for good health above all else. This is a really good recipe for anyone. I think I would do exactly this but grate cauliflower and use it, along with a little chopped walnut, in place of ground meat (If you put a little worsesetershire sauce as you're sauteing it takes on a meat flavor, almost!).

    So funny, we’ve tried alternative pastas on the keto diet. I never thought about cabbage until I accidentally put some sauce on some left over cabbage. And I went “oh my God“ this would make a great substitute for pasta. I look online and there you are, beautiful as ever. thank you.

    My mouth is watering :) I am especially glad to learn about adding vinegar to the tomato juice/puree - I used tomato juice recently in a bulgur dish and even though I added a bit of sugar, the juice gave an "edge" to the dish I did not enjoy. Next time will be better!

    Thank you for your creative, and I expect, tastier, adaptation to standard diet cabbage soup that, decades ago, doctors in the US would suggest specifically for weight loss, as it burned more calories than it contained. When I found the standard recipe I had as much enjoyment from looking up global cabbage recipes that might accomplish the same thing that could offer variety. I’ve never found one that approximates pasta bolognese, so am looking forward to yours.
