    You should always, "season", your smoker. If your using a trash can, barrel, or any other makeshift smoker, it should be burnt out and scrubbed to remove any type of residue or coating and it improves the flavor of the meat.

    You can also do this with two cans, one with the middle circle cut out and some holes around the bottom and top, and the other one sits on top while a candle heats it

    Don't buy a galvanized trash can to do this. Yes a smoker isn't likely to get hot enough to vaporized the toxic metals, but why risk it? Look up how Alton Brown made a smoker out of terracotta pots. The terracotta will never kill you. but it will cost you more than a $5 trash can.

    What watt hot plate do you think I could get away with to do this in mid 80's degree weather ? I'd like it to be able to get the internal temp at least to 225.

    Got a question - Do you add more water to the chips eventually? I know the water will evaporate. Would the lack of water prevent steam/smoke? Would the chips, without water, flame up?

      They are presoaked, not soaking while cooking.

    Is it safe to use a galvanized trash can? I am referring to the zinc coating which might come off with the heat and end up contaminating the food.

      Zinc requires pretty high and sustained levels of heat to vaporize, over 900⁰ I believe... WAY hotter than you'd ever get this trashcan from a single household hotplate.

      The can is tapered, the rack is sitting against the edges of the can.

    I thought the same thing, I'm thinking because it seem to get a little smaller on the lower part of the can than the top is, it could just be fitted snuggly against the inside.

    Zinc can get to 392 before it starts to melt. Vaporizes at 1600.

    Temps under 700 degrees wont effect the zinc coating read a book somtime ya haters

      I would still burn it in really good before I tend to eat anything that was smoked in it

    This is better than my homemade smoker lol. Im using 2 aluminum foil pans. One for the bottom and one for the lid.

    Good job. The less complicated the better. Have you tried laying a few bricks in the bottom of the can and setting the pan on the bricks? The idea is to ditch the hot plate and go natural. Light 4 pieces of charcoal and place in the pan. (Do not expose the galvanized trash can metal to high heat. It produces toxic gas.Use the bricks). Then put your water soaked chips over the coals. You'll get plenty of smoke trust me. Dribble a few drops of bacon fat on the wood if the meat isn't dripping fat.

    The can is tapered. When the grill reaches the point inside the can that the can diameter is the same as the grill, the grill will not go down any further. No clips required. You are over complicating things.

    If you don't puncture at least three more holes in it you're not going to get adequate air flow and you will burn up your hot plate very good idea though

    So - apart from the hot thin metal of the tin all you've got to do is either snag the electric cord on the metal tab electrifying your smoker or even better pour water from your tin onto the electric ring. SO many ways to get hurt, it's kind of hard to decide which to do first! Oh, and heating up galvanised metal is dumb too - ask a welder!

      Get over it. It takes temps at 600 degrees or higher to actually affect the zinc to cause any real harm. If you're a hypochondriac, then just fire up the can with no food in it to burn off anything first. All your objections seem to require stupidity to get hurt. But, apparently you want to decide which stupid act you want to do first. Go for it.

    And what may I ask is wrong with an old trash can if it has been cleaned out? Did you not learn anything in grade school? Remember the old saying "Waste not, want not" or "One man's trash is another man's treasure." There is a time coming where your "throw it away & get a new one mentality is going to be fractured to the core. A time where the ability to adapt, modify & change will not be for saving a couple of dollars here & there but making the difference between living & dying.

    I saw your video and I went to see how much it would cost to buy all that stuff. At Lowes it all, with tax cost $73.00. Its easier and better to just buy a real one at Lowes for $69.00 and it has all the coils and grease catcher and 4 shelves in side with a temperature gage. Just saying , and its nicer than yours.

    It doesn't get hot enough to get the zinc going - temps are like 80 - 100 degrees.

      this is the heat zone where bacterea grows.when holding meats to smoke at these temperatures you should use pink salt to perserv the product.

    I've been looking at making a smoker almost exactly the same way. Question for you, if I'm wanting to trying and slow cook meat in this at around 200-225 degrees, would the hot plate melt?

    If he ditched the electric hot plate and just used a pan, some charcoal & his soaked wood shavings the cost would be dramatically less.Warning! Fire and galvanized metal make poisonous gas. He would need to either pre-burn the can or set bricks along the bottom and maybe two high around the inside edge. That should shield the metal sufficiently from the heat of the coals. There is something to be said about doing it yourself & the pride of accomplishment you can't get by going out & buying one.

      Galvanization can be removed with a strong base (lye water, for example) and the steel underneath won't be corroded. Wear safety gear doing so.

    I definetly understand why you shouldnt/dint wanna use galvanized metal (im a welder...trust me i know about the hazards). But what if you used weber grill paint on the inside?

      Weber kettle grills are coated with a baked on enamel. Traditional paint won't provide the same result.

    6 hours of smoking with no door for you to feed chips??? what about temperature?? makes no sense to me at all...thanks anyway for the idea but you need a lot more to do and have a good smoker

    Pretty sure this isn’t food safe. The galvanized metal is treated with a coating that is toxic. Please do not cook or store food in these types of cans. I love the idea but not safe.
