Like something novel? I'm not nearly as good a pianist to notice anything like that myself so would be nice to hear it from you :)
Listen to different interpretations of the piece and pay attention. Listen to the tempo changes, rubato, and dynamics. Theres more in-depth things like pedaling and dynamic control between the two hands which are somewhat noteworthy but not as obvious. When learning the Liszt Consolations I dont know how many different interpretations of the sixth consolation I listened to, but it had to be up to 10-15 and I returned to ones I had already listened to. Its fun and who doesnt love listening to amazing music. Its a skill and you dont necessarily have to be good at piano to appreciate interpretations on a deeper level. Youll also start to notice what you like and dont like.

It even hurts my fingers!! And then, while I replay from memory very easily all my exam pieces when I was young, the pieces I studied barely 6 months ago, I have to go back to the score each time!
