You might need to use a little more water if using bread flour, but it will work great. Make sure you use visuals to judge the first mixing stage when developing the gluten network. You need to do the window pane test. See the written recipe for details. www.emmafontanella.com/quick-panettone 💕

Sourdough enthusiasts make a big deal about using Giorilli's original recipe and the lievito madre starter, etc. I got into studying a billion different methods and did do one as closely as I could to the "real deal" with starter I worked on for a month. Then I found an Italian lady's yeast version and it's really good (as I'm sure yours is). Do you have an opinion on a really good reason to do the 3-day version? Is it genuinely so much better? I'm definitely going to try yours; I just always wonder if I should go back and try the "legit." one again.
Traditionally people have used sourdough starters but in my opinion, we don’t need that as the flavor of panettone comes from the butter-enriched dough, the scent of citrus, the dried fruit and candied peel embedded in the panettone. I just don’t think sourdough adds anything here. In fact, I think using sourdough is actually "worse". One of the benefits of using commercial yeast and a quick fermentation is that we don’t need to hang the panettone upside down when cooling it.

Hi Linda! Start the bread in the morning. 9 am knead the dough in the stand mixer for 15-20 min. Then transfer to the bowl and do the stretch and folds every 30-45 min. Around 12:30 transfer the dough to the mold and allow to rise to the top of the mold. This will take about 3 hours, so at 3:30-4 pm the panettone should be ready to go into the oven. Bake for 1 hour. Allow it to cool for at least 2 hours before enjoying it. Definitely give this one a go! It's a lot easier than most traditional recipes! It can be fussy, needs patience! 💕
