The recipe is great, must have been my yeast!! Even though not old, didn’t rise! Or my kitchen is to cold! Let it rise in your oven, just turn light on!! Good luck 🍀 😊
Hello! If a dough doesn’t rise, it’s usually because of the yeast that is expired. Sure they turn out great next time! The temperature is important too: for a quick leavening put the dough in your slightly preheated and turned off oven (about 28C). For a long leavening you can place it at room temperature for many hours or in refrigerator up to 24 hours. Happy baking ❤️

Many people don't like candied fruit, I'm not a fan too. For this reason there are many Panettone variations, without raisins or candied fruit or both of them! Glad you like my recipe even if you're not a big fan of this treat

I've used Turmeric just for the yellow color: Panettone is always made with egg yolks, so it has a yellow color; because I made it eggless, I used Turmeric to give a yellow color...but you wan't taste it, so it's not needful for the taste. Just skip it if you don't want to use it! Let me know ;)

Yes, the consistency obviously can't be like the regular one, but it's a good alternative for vegetarian and who lives out of Italy where Panettone can be very expensive! Glad you like them, Alina
Hi Dia and welcome here! If you use all purpose flour you have to reduce the liquid amount because it absorbs less liquid than bread flour...or you'll get a very sticky runny dough!

Here in Italy the ones with chocolate chips don't have raisins and candied fruits, so you can skip completely raisins and candied fruit and just use chocolate chips, it's totally up to you! Can you pls provide the exact measurement for bread flour in grams? As mentioned 360-390g, am afraid the difference of 30g may affect the consistency of the doh. Thx
Hi Wendy and welcome here! It's impossible to give perfect exact measurement when you make bread because every flour is different and absorbs different amount of liquid. I've used 360g of Manitoba flour, but maybe your flour (even if it's a Manitoba!) absorbs less liquid and you need a bit more flour. Consider that is better to get a sticky dough than a dry dough, or your Panettone will turn out dry. Watch in the video the consistency of my dough to check if your dough has the right consistency. You can cut a piece of cardboard from a small box, roll it to a tapered cylinder that fits the mold and secure with adhesive tape. Takes a couple of minutes.

I haven't make it yet. But I will try this recipe shortly. FYI last year I made Panettone with your other recipe and turn out really great even though I use pyrex mold. Its hard to get panettone mold here.

Hi Edward! If you use the regular panettone mold, you can put them upside down to cool down; but if you use the homemade molds, you can't. Yes, mostly in the south of Italy it's common to have a great seafood dinner the night of 24th; here in the north it's more common to make a great lunch the 25th. Instead of a muffin tin can I use a silicone mini bunt cake mold (6 count)? It would make it so pretty.

What can i use instead of the Turmeric
I just used Turmeric to give yellow color, since this is an eggless Panettone version. You won't taste turmeric. So you can skip it, or just use some drops of yellow food coloring. For the egg version, follow this recipe: th-cam.com/video/zCRHjhTNoII/w-d-xo.html
Ciao Valentina, Come Stai. These are perfect for Christmas gift baskets. The flavor varieties are endless. Mix almost whatever you want into it. When you make the small ones, do you have to hang them upside down like the larger ones.? Last week I made some small breads flavored with, small diced Mortadella, roasted red peppers, lots of Romano cheese and herbs and some good olive oil. I will try that combo in the Panettone style. I also like the way you made the molds out of the parchment paper. Hope to see some Christmas dinner suggestions B4 the holidays. Do you have a big Seafood dinner on Christmas Eve in Italy.? Hi Edward! If you use the regular panettone mold, you can put them upside down to cool down; but if you use the homemade molds, you can't. Yes, mostly in the south of Italy it's common to have a great seafood dinner the night of 24th; here in the north it's more common to make a great lunch the 25th. I never met my Grandpa, he was from Ancona, is that considered the North. I did not make the bread Panettone style just loaves and rolls. My neighbor said that they loved it. Even though they don't speak English my Spanish is good enough that I understood him. I like the idea of a nice Christmas day lunch, sounds like a more relaxed atmosphere. Either way I always stay focused on why we are celebrating, gifts are nice but the reason why we celebrate sometimes gets lost. Thank you for getting my Sunday off to a great start, got to go make some sauce for the manicotti later. I got some San Marzano tomatoes from Italy and they are delicious. Hi Amanda and welcome here! I've never said it's vegan, if you read the description box it says "vegetarian". My eggless recipes are made for strict vegetarian people (some of my followers ask me for eggless recipes because they are strictly vegetarian), not vegan.

Hi Thomas! Many people can't eat eggs and ask me for an eggless version of Panettone. Here my classic easy recipe: www.how-tasty.com/panettone-easy-way/
Usaully in Italy we add orange zest and candied orange and cedar, not Bergamotte oil. But you can find many Panettone here, sometimes with candied bergamotte too.
