Why do you need a thermostat for race car? I also don't even have a thermostat for water and I endurance race my k24 EG Civic. If it is street driven and winter usage, then yes you need one. Otherwise, just start the motor and let the oil warm up or take it out for a warm up lap to get the oil up to temp. What you should do is to put in a remote oil filter setup route to the front mount oil cooler. Specially for a race car build, less item on the motor that's not vital the better and you have a less chances of things go wrong.
