HOW TO COOK REAL take away egg fried rice PROPERLY

  • Egg fried rice recipe
    1 egg
    1 bowl pre-boiled rice (cooled)
    1g salt
    1g MSG
    1 teaspoon light soy sauce
    Half tablespoon dark soy sauce
    2 tablespoon vegetable cooking oil
    Fried rice is a great way to make use of your boiled rice from previous meal. It taste much better than reheating your boiled rice on a micro wave. It is simple to cook and tastes fantastic.
    I use long grain rice in the shop, 1 egg, salt, MSG, some light and dark soy sauce.
    Method
    Heat wok till quite hot and add 2 tablespoon vegetable cooking oil.
    Pour the egg in and stir it thoroughly before adding the boiled rice.
    Turn heat down to medium/low and stir fry for a couple of minutes until the rice heats up.
    Leaving the heat at medium/low add the salt and MSG, stir fry for a bit more so the flavour fully combined into the rice.
    Add the dark soy sauce and fry for a minute or so before adding the last of the light soy sauce.
    Keep on stirring so that all the condiments are full combined with the rice to complete.

    btw "Low heat" on a hob like that is basically maxed out on your biggest ring heat on a home hob

      Seconded. Check out the serious eats article on it. You need as high a heat as you can go. Cook the ingredients in batches. Make a small portion of rice so it doesn't steam. It's very easy to overcrowd the pan at home.

    Will try your way, I've been using the same ingredients but could never get it right. I massaged the msg soy sauce and salt into the rice then fry.
    Will try your way in the next couple of days and see how that works.

      I used to do this, mixing everything in advance. I think this doesn't work as well as it adds moisture to the rice which makes it harder to brown using the heat of the wok (wok hei). You want achieve a little bit of browning on the rice first just by itself (with the egg), then add the soy towards the end to maintain more of the soy flavours and you don't get a burnt soy flavour in the dish. I found doing this turns out a bit better than pre-mixing.

    This is amazing, do you have videos for REAL salt n chilli chips and one for REAL curry sauce ( I know the curry sauce has a lot of ingredients I hear, things like cinnamon, star anise, special branded curry powder, bay leaf or curry leaves, salt, msg, thickening agent such as potato starch etc) ?

      I don't weight the uncooked rice. We tend to use how many we cook for by the bowl and add appropriate water.

      I use a brand call Laila long grain rice from my supplier. I don't think they are available in shop. They come in 20kg bags.

    My old takeaway i used in london when i lived there all the fried rice dishes wasnt as dark as your rice
    it was still white do you think that they might not use dark soy sauce
    Atm the moment i am using either lee kum kee or pearl river soy sauces

      About a teaspoon, heaped. I use it all the time to enhance the flavour. This method is how i cook my fried rice at home. Great, simple video this.
