Same here. I found out from my old Italian neighbor that strong smell means the egg isn't fresh. He keeps chickens and I get fresh eggs from him and have no problems with smell or keeping them down

Even if the oil is settled on top, the layer should be thin enough for the paper to disperse and make contact with the water layer when placed down. It works out fine when you do it, give it a go :)

I love Korean food, so eat a lot of it, but these eggs are ALWAYS in my fridge even if nothing else is. I drizzle a bit more Sesame oil on them when I serve them and add some fresh green onions. Warm, on top of a bowl of rice... comfort food deluxe! 😋
Actually, there are many different kinds of these marinated eggs! They’re all super delicious, but if you’re wondering about ramen eggs; they’d be called ajitama. But in the end, who cares what they’re called, they’re amazing! 😋
I used her recipe because it looked the most appetizing that I had seen out of all of them, but it was only OK at best. I even let the eggs soak for up to a week and stuck them a couple times but it really didn't put much flavor into the egg. Now, where the real yum comes in is using that sauce over some pasta with chicken! OMG it is the actual best pasta ever!! I even made a batch of it in a little bullet smoothie blender just to pour over some pasta one night because it is so delicious. And so quick too. With q rotisserie chicken, that is like a1 10 min meal! Great on those late work nights or late pool nights in the summer!!😊
Here's a trick for better cooked eggs of this type. Steam them. Unless you really man handle the steamer, you won't have any broken eggs because they aren't moving, and they actually get more evenly cooked all the way around. Second, rather than putting them in an ice bath, put them in room temperature, water. And ice bath can cause the membrane under the shell to tighten up and make it harder to peel. All you need to do is put them in room temperature water and peel them as soon as they are cool enough to handle, which is usually within about a minute. Peel them under the water, and it'll come off nice and clean.
To make your eggs easier to peel without wasting salt and vinegar that doesn't do anything. Simply crack the bottom of the egg slightly where the air pocket is to allow the egg to expand inside while cooking. Once it's cooled in water it will shrink bringing water into the shell and making the shell very easy to peel.
Looks pretty good. I'm half-Filipina, and my mom sometimes makes Adobo with boiled eggs that soak up the Adobo sauce and it's absolutely delicious. I wish I could share her adobo with everyone because I've had other people's versions of it and none of them have even come close to hers.
Eggs are one of the few foods I don't get the ick for. Specifically scrambled eggs. I always find it so interesting when things I like and find comforting are so vastly different from someone else. Being different yet still chill with each other is so cool.

I feel you on the egg ick. Sometimes when im frying eggs or making scrambled eggs they straight up smell like wet dog. I dont know if its just the grocery store eggs or if covid really messed me up, but sometimes its enough to lose my appetite, and my dogs get a nice meal instead
These look amazing. Im super texture sensitive but my favorite eggs are over easy on toast. Ideally id only use the yolk runny for a sauce on other foods but id feel bad wasting the white
Another egg thing that me and my mom like to do is Vietnamese steamed eggs! They have a bit more of an outlandish flavor to some people, but god I always find them so tasty and you can stew tofu the same way! The way my mom does it is with onions, soy sauce, water, and star anise
just a tip you're welcome to ignore! "shocking" the eggs by dunking them in an ice bath immediately after removing from the hot water(and giving them a couple stirs the first few minutes while chilling so they don't heat the water immediately surrounding them too much) is enough for easy peeling, no need to add anything to the boiling water
I think I’d be a better idea to mix the sauce together before throwing in the eggs just to prevent the eggs from breaking when u mix the sauce

Actually using Rice Paper wrappers works better without putting Lint from the Paper towels onto the Eggs and into the Marinade.
