It's a high profit dish that fits easily on to high end menus, that while not necessarily easy to make is certainly trainable. It's the same reason you hear lobster and beef wellington a lot, people will gladly pay fifty to a hundred a plate for it, and you can train high end staff to chun it out for less then twenty a plate.
Bobby was a fucking hero in this clip. He knew Petrozza had what it takes and he got him back on his feet. We all need a Bobby in our lives when we're ready to quit.
Bobby pepping Petrozza back up is a clearcut reflection of the butterfly effect. If Bobby hadn't left the kitchen to go check on Petrozza and pep him up, Petrozza would've been out of the competition that same night, and Season 4's finale could have been much more different. Instead, look at how far he went. Encouraging and motivating someone who's in the dumps can have such a powerful effect that you never realize the magnitude of, until you look back on that moment.
