The Chicken Vesuvio sandwich there is even better than the steak I think. Perhaps THAT one is the best in the WORLD. The trick that the vesuvio has is the garlic butter... that flavor stays in your mouth LONG after you've eaten it, but not in a gross way, in a heavenly way. Also... Love how Rosario says the words "the South Side Working Class". That's the REAL Chicago right there.

FINALLY a video that highlights this haha (i mean there are many, but people still don't know about this). Breaded steak is not only a Chicago thing, it's almost exclusively a Bridgeport thing. I grew up on it and love it. When my Brazilian Coworker was in town, i took her here. She said she's have this over deep dish anytime she would visit.
I only lived in Chicago for three years, from 97 to 2000. Back then, Ricobene's still had their location in the loop. I'd have the breaded steak sandwich twice a week, once at lunch at work, and once a week I'd grab one of my way home. We'd get them for lunch on Mondays, and man, the whole office would be dragging, needing a nap. So good. So damn good.
This is one thing I love about Chicago. Been here about 16 years, and still discovering new places. Never heard of ricobene, but you best believe they'll hear of me now.

I’m a line cook from Chicago and I’ve been making breaded steaks for 25+ years. Tack on another 20 or so for how long I’ve been enjoying them. Lol! Anyway Ricobene’s steak is good but, I almost never order it there. The Chicken Vesuvio is excellent though! I highly recommend that. Don’t sleep on their pizza either as it’s really underrated compared to other Chicago pizzerias. There used to be a place on 32nd and May St (Bridgeport neighborhood) called La Milinese, they had hands down the best breaded steaks in the city. Unfortunately it was a family owned venture and once they reached retirement age they moved back to Italy and took their recipes with them. I really miss that place.
Where do you recommend a breaded steak sando these days? I'm in Logan but will travel for it! I love Ricobene's but if there's one I need to try, let me know!!
I’ve never worked for Ricobene’s but, I’ve worked at a few other places in Chicago that serve breaded steak and, running it through a machine is exactly what we do.

Weird to me, an old employee of Ricobene’s, and a lover of the entire menu, that there would be Giardiniera on the vesuvio sandwich? I’ll have to give it a try. Also imo, you haven’t had the breaded steak sandwich until you’ve had it on garlic bread. 👊🏻. Now I’m hungry.
I make these at home since I live about a hour from Ricos, I Jaccard my meat and use a meat mallet with the both the flat and studded end as it helps to tenderize and make it much thinner. I will also sprinkle a light coat of meat tenderizer to both sides of the steak prior to breading. Allow the tenderizer to work for at least 30-60 minutes prior to frying.
The Chicken Vesuvio is good, I've had it, but honestly, Ricobene's has the best pizza puff you're ever going to find anywhere. I don't even like pizza puffs and it was incredible
I'd been getting it most of my life, it was ok. However, I read the "best in the world" article, and decided to get it THE WAY HE SAYS IN THE ARTICLE. And… he was right! IMO, the secret is getting the cheese MELTED. TELL them to put it in the oven!!! The giardinerra is also required unless, like me, you have giardinerra at home. Never had the vesuvio, ill try that next time I'm there! Another Classic is the "old school" Italian Beef (or, my favorite, the combo beef/sausage): tell them you want red sauce on it. This is how the old timers get it, and its pretty good! Another old style Chicago favorite is getting a pizza from somewhere like Vito & Nicks, with just sauce and sausage (no cheese). It's good, has a vibe similar to focaccia.
We regularly order the Steak Sandos at my job in the loop. You need a nap for sure after eating it but it's dammmmmned good! As a local who grew up just blocks away, Rico's never disappoints! Been going there for over 20 years now, I love Rico's but the breaded steak doesn't do it for me. I go for their Chicken Parmesan instead, which is basically the same sandwich, but chicken, with their signature chunky red gravy on the side. For the inner skirt steak, first buy from a Mexican meat market have the run it through "the machine" "machina" twice. It'll be "Thin". Let me know if you recreate it this way. Love your recipe. Mexican breaded steak is called a milanesa. That's how I know how to get skirt steak thin.

He responded no man you gotta try there breaded steak pizza you’ll never order the sandwich again. Haven’t tried as of now but that’s saying something and now I have to.
The proper method to use the jaccard device is to roll the meat then press the blades through it. Then roll it the other way and do the same. The reason they can't tell you to use it that way is because it's more dangerous but everyone I met who works in a professional setting uses it that way.
Ricobenes got broken into a couple of days ago. I doubt they got anything of their cash safe, but I believe they did manage to run off with some cash. So definitely anyone in the Chicagoland area reading this lets show them extra support this weekend ❤!!! Ricobene's probably uses a butchers tenderizer machine. In the 70s & 80s, I would have the butcher send my skirt steak through the tenderizer twice. By the way, skirt steak was $1.49-1.99 /lb back then
maybe they have some kind of homemade pasta sheet type device that can handle the density of meat? or maybe they're so blue collar they get an asphalt roller compactor (ha ha ha)
