  • EASY FONDANT RECIPE
    Easy Rolled Fondant for figures and cake decorating
    Note: if you want it to be more flexible, increase the glucose to 200 grams, and you may also want to add Shortening atleast 1 tbsp (you add this together with the glucose and gelatin =)) you may also reduce the tylose powder
    Ingredients
    Confectioner Sugar/ Powdered Sugar 5 Cups (600 Grams) Sifted
    1/2 Tbsp to 1Tbsp Tylose Powder or CMC powder
    1 Tbsp Gelatin (I use Ferna or Knox Brand) (30 Grams)
    1/4 Cup Cold Water
    Glucose 1/4 Cup or (77.5 - 80 Grams)
    Procedure
    1. Mix the gelatin and cold water, and wait to bloom
    2. put the Gelatin and the glucose on microwave for 30-45 sec until melted then mix together and stir.
    3. Mix the confectioner sugar and the tylose/ cmc powder
    4. pour the gelatin/ glucose mix to the dry ingredients and mix till binded
    5. knead with shortening on hands and wrapp and put on air tight container
    Storage: airtight container inside the fridge or chiller
    Life: fondant form can last 3-4 months on chiller
    if made into figures or cake dummies can last 1-2 years protected from humidity

    For everyone asking Fondant Versus Gumpaste
    -fondant is what you use to wrap cakes, its flexible but dries hard also but not as hard as gumpaste
    -you can male flowers and figures with fondant but it does not dry as hard
    -NEVER use gumpaste to wrap your cakes because it will be really hard.
    -gumpaste dries hard like a rock and is more lightweight than fondant
    -gumpaste is used to make flowers figures and other cake decorations
    -when making fondant and gumpaste humidity is a great factor if its humid (humid means the air is moist, like when it rains or if you are near coastal places) if its humid dont use gumpaste and fondant that has sugar base because it will melt, sugar versus water, the sugar will melt.
    -there is a different recipe for humid weather MACO paste is one and others are available on my online class you may message me on Facebook and Instagram at marckevinstyle.
    -when storing gumpaste and drying them you can check my separate video on that on my channel,
    - never ever put them on closed container of it's not yet dry, imagine a moist food contained in airtight it will definitely develop mold,
    -GELATIN POWDER is different from AGAR AGAR or GULAMAN, you are only allowed to use gelatin powder which is made from animal bones and collagen, if you insist on using Gulaman it won't form and the sugar will be waisted.
    -what fondant should I use when its humid, please message me it's available on my classes :)
    -NEVER EVER put a finished product or output made from fondant or gumpaste inside the ref because it will melt, YOU CAN PUT DOUGH FORM OR PASTE FORM inside the ref, then cut or take what you need only and let it thaw or sit at room temp for 30 min to one hour before use, or you can microwave for 3 to 5 sec on medium high, you repeat of needed, and knead with shortening :)

      Always welcome hehehe if you want it softer you can lessen the tylose powder a little hehehehe :) you can also use cmc powder if there's no tylose

    Hi I would like to ask if I use fondant to make figurines or flowers, how early I can make before assembly to the cake? Can I make the figurines one week early and store in room temperature and decorate the figurines on my cakes after one week?

    Marck isnt icing sugar used in fondant just like gum paste. Also can I mix the glucose with the gelatine and double boil them together. And finally Marck I say again you are very very neat, no wastage and no mess. Very rare to see this among the males, but you are 1 in a milllion. Thanks a million.

      awww thank you for double broiler method, heat the gelatin mix first then heat the glucose and mix together, the gelatin should be liquid first before you mix with the glucose =) icing sugar and confectioner sugar is the same used in fondant =)

    Hi chef Marc Kevin! I made this fondant recipe but it was so hard that it feels like a gumpaste. I followed the measurements naman...di ko sya nagamit to cover the cake. I just kept it in the chiller and will use it as gumpaste for the next project. Sobrang tigas po talaga.

    Marck no one has been able to help me with this problem. I know for sure you will have an answer. I live in India and during the monsoons which is normally from June right through September, the gum paste starts sweating, it never dries and the same goes with fondant. Please help with your valuable suggestions. Thank you Marck

      Ohhh I see that's because humidity is high, gumpaste and fondant will not dry if humidity is high because it has sugar in it, I'f its humid you need to work in a closed area, and to help gumpaste dry faster a fan helps, if it's super humid a dehumidifier helps also
