I think on the PlayStation 2 you get bonus cash for destroying all the competition cars against Kuffman cabs. The downside is the other Taxi's become rare to find in the game
I passed this by putting one of those trucks with the ramp on it there, and swiftly driving over and switching to it. I drove to the sea wall and just waited, several cabs went into the sea and loads of others flipped. The boss also drove at me at full speed and just jumped into the sea.
Everyone making this so complex and here I am just waiting by the ledge in the cab. They all come flying at you full speed without regards to the ledge and you can just… accelerate last second so they all fall into the water LOL.
The way i played this mission is i just kept driving in a circular motion untill the timer counted down the other cabs followed but couldn't damage mine .
When I first played VC, I went ahead and completed 100 fares, so I just used the boost jump over the gate and destroy the taxis using a rocket launcher and a grenade.

In my high school days I had another tactic. Just ram the car at the corner of the garage and jump onto the edge. The enemies are in vehicle and they can't get onto it. You can walk over to the narrow edge between the garage and the sea and toss grenades to make them go boom.
Man, I miss these games. I remember completing so many Taxi missions in GTA III and you'd be rewarded a crimson red taxi (we called it the Devil taxi lol) with spiky front bumpers and if I remember rightly was considerably faster than the standard Taxi.
I used to spawn a tank and then park it right next to the pink marker where you beep the horn then when you beep and the mission started you simply exit the taxi then enter the tank and watch everyone blow themselves up crashing into the tank. Easy money.
There is a ledge beyond the containers on the left, get out of the car, walk down it and hang out for the minute. The first wave wont attack anymore after the minuet is up. As i remember the leader cab will keep plowing into the containers until it blows up.

It's exactly how I do that mission but I like to play with the king cab 1st like its a bull I get of on watching it destroy itself then went the driver pops out I look for less violent ways to end him
I used a different method few years ago. I actived the vehicles flying and water floating vehicle cheat codes and then flew out to the sea and reached a land area and then used the bigbang cheat code. Gonna try this one next 😂
In 20 years of playing, it never even occured to me to try to get out of the cab. I thought you had to remain in the car, so I'd do laps while avoiding the other taxis.
