Tourists not following this tradition, while not required to participate, will be looked down upon.
to be fair: the dish IS absolutely delicous. Smoked pork chop (and/or the kinda special sort of saussage called "Pinkel") simmering for hours and hours in the kale , then sided with potatoes. There is an important difference between the eastern and western part of northern Germany regarding the treatment of the poatoes, though.. and one is objectively better. So in the western part the potoes get mostly just cooked in salt water, while in the eastern area they get fried and caramlized with sugar, which adds that next level of taste and texture in contrast to the smokey meat and the salty umami flavour of the watery, mushy kale. The cultural importance of this dish for the Frisian part of the population can also NOT be overstated. There is one particually nice folk tale around it, where Pidder Lüng, a local folk hero on the island of Hörnum while the danish occupation of the area about 200 years ago, drowns a danish taxman in the big ass kale pott simmering on the stove, because he - the taxman - wanted unreasonable high taxes for the danish opressors, insulted Pidders parents and spit in the kale pot. And then people say germans are too serious, dont have a sense of humour and all their folk stories are somewhat sinister - preposterous!

Caramelizing potatoes or even adding sugar to the kale is neither a west or east tradition - it is rather typical for Schleswig-Holstein on the northern edge of northern Germany. On the southern edge you can have Bregenwurst (brain sausage) with kale. In Saxony-Anhalt even roasted duck works well with kale.
Equal parts red wine and orange juice, a couple shots of cinnamon and 4 cloves in a pot. Warm it up while stirring till it's steaming (not boiling) and enjoy👍 Depending how sweet the OJ is, I through some brown sugar in as well...

Grunkohl was the only way I could get my dad to eat kale when he was on chemo and needed more vitamin K to keep his counts up. Now he goes looking for kale recipes on his own.

We have a variation of this for New Years in Sønderjylland, Denmark 😁 with a kind of ham, 'cabbage'sausages (soo meaty), salted pork belly, potatoes, candied potatoes, mustard, pickled beetroot, snaps, beer...no New Year without it!

As someone who comes from Sylt, it is more of a tradition to eat Grünkohl on Biike. In the Winter it is more Fleischsalat with Bockwurst. At least for my family

We hold torches, throw them into the big fire (it is normally sticks and all of the christmas trees) and then we drink Glühwein and celebrate

We eat grönkål here in Sweden, but with lots of cream and some syrup
Dunno about the syrup personally just the cream but in my family we do tens to serve some form of pork aswell
