Homemade Fondant(without marshmallows)-RECIPE

  • Never buy store bought fondant, EVER AGAIN! This fondant is soft, supple, and super delicious! Don't waste your money on store bought fondant when you can make your own and know EXACTLY what goes in it! :)
P.S. It's pronounced more like "fon-dint." Fondant was introduced to me YEARS ago, by a woman with a very strong accent and she pronounced it, "fon-dawnt" and well, once I found out how to really say it...I was already set in my ways! So, don't say it like me. LOL.

This is by far the best fondant recipe. what ever works for you, you're free to use. as for me,
    - this recipe doesn't break,
-it lasts long (for those who discourage milk, i used long life milk)
    - it firms up without having to use tylose powder
    - its easy to make and super stretchy and does not tear.
    - it tastes good and is not too sweet.
I'm a professional baker and no one has ever complained about this fondant.

35 years ago, when I started making cakes, there was really nothing in the shops in the UK for icing, except eggs an icing sugar. I found a recipe for 'Australian icing' in a book. It involved kneading icing sugar into liquid glucose. It was hard on the hands, but still the best fondant I've ever used, especially taste wise, and so simple to make.

I made it about 2 months ago and recently used to cover a cake. It is still fresh and the taste is just as you described it. Many thanks for this recipe. Marshmallow fondant is so incredibly easy. Its not at all sticky. Unless you don't use enough confectioners sugar. Its not really messy, but I don't have a stand mixer so this would be much harder on me to make. And you should use Crisco with marshmallow too. Anyway there are so many ways to make fondant its incredible.

    • @BakingRecipesManisha
      @BakingRecipesManisha 9 ปีที่แล้ว

Exactly, better use marshmallow and adding little bit of cornflour or tapioca starch will unsticking the fondant and turn it delicious. My preference is tapioca starch :)

To preserve it, place it in an air tight container and it will not attract bugs. But I made fondant cake, I am still not satisfy with the taste while eating it, I prefer icing instead or adding almond powder, some of my friends suggested.

I usually make marshmallow fondant and then I tried this recipe and it was ok, but here are some information to make the break down easier:
    Opinion:
Marshmallow fondant tastes better, by far vs Gelatin
Marshmallow fondant is easier to make vs Gelatin
Marshmallow fondant IS messy to make vs Gelatin
    Both are EXTREMELY SWEET
There are certain things you can do better with either one. Consistency, hardening time, etc.... are all things to take into consideration before a cake project. In leu of fondant for bows, flowers and so on, there is gumpaste. (gumpaste is about $9.00/pound)
    Equally easy to add color
    Facts:
    Marshmallow fondant recipe:
water (basically free), powdered sugar ($2.00), Marshmallows ($1.50 x 2 bags)
Flavoring (extract or baking emulsion-optional), Other things I have heard of adding - corn syrup(small amount) and salt.
    Gelatin recipe:
whole milk (about $0.20 for amount used), knox gelatin ($2.00), corn syrup ($2.85),
SALTED butter ($1.10 for amount used), glycerin ($1.50 for amount used),
vanilla extract($0.60 for amount used), butter flavoring ($0.35 for amount used)
lemon juice powder(optional), powdered sugar ($4.00), salt (I won't bother since this is a common cheap staple in most homes)
These are average prices shopped in Wal-mart in the US. Cheapest one-stop shop for most ingredients.(Glycerin is not common in many stores).
Personally, I will stick with the marshmallow. With an at home cake business, I wan't to grow by not only keeping cost low, but making sure my products taste the best. I will also add that this recipe IS tastier than other glycerin/gelatin recipes. Lastly is is such a pet peeve to hear it pronounced as Fondaunt than Fondant, it doesn't make it sound french or fancy.

Before I even go past your statement that marshmallow fondant is messy and sticky, if you have never used it or made it you should try it before stating to your viewers that its messy and or hard to use! the basic marshmallow fondant when made correctly is fast and easy to make, from start to finish takes no longer than 10 mins and is NOT MESSY nor if mixed properly it is NOT sticky! you should try it you may just be surprised

The link to the recipe can be found in the description box below the video. I purchased the glycerin from Michaels the craft store. You can leave this out at room temp for 2 weeks. The milk is heated and cooked through so it will not spoil if left out.

Using marshmallow is actually incredibly easier. If you use a mixer, or simply a spoon, it's not sticky at all. And if you mix your gelatin and glucose syrup recipe by hand it will get incredibly sticky and messy as well. So you should really try marshmallow before passing judgement like that

      INGREDIENTS:
      1/2 cup whole milk
3 Tbsp of unflavored gelatin(or 4 envelops of Knox’s Gelatin)
1 cup of light corn syrup
      3 Tbsp of SALTED butter
      2 1/2 Tbsp of glycerin
2 tsp of vanilla extract(you may use clear vanilla)
      1 tsp of butter flavoring
1 tsp of lemon juice powder(optional)
3 1/2 to 4 pounds of powdered sugar
      2 pinches of salt
      Additional items needed:
      Vegetable shortening
Extra glycerin(for kneading in, if necessary)
      some corn starch
      A stand mixer
      INSTRUCTIONS:
Place your milk in a 2 cup measuring cup. Sprinkle in your gelatin and allow it to firm up or bloom(should take 3-4 minutes).
Place mixture in the microwave and heat on HIGH for 1 minute. Stir. If your gelatin does not become liquid, then continue to microwave using 15 second intervals until melted. Make sure to stir between heating cycles.
Put corn syrup, butter, glycerin, vanilla extract, butter flavoring, and salt into a large measuring cup. Add this into your milk and gelatin mixture. Stir.
Microwave on high for 2 minutes(or until butter has melted). Stir. Set this aside and allow it to cool to LUKE WARM.
Place 2 pounds of powdered sugar into your stand mixer. Add in your lemon juice powder if using.
Strain LUKE WARM mixture into your powdered sugar. Mix it by hand with a spatula until blended.
Fit your mixer with the dough hook and turn the mixer on to “stir.” Slowly start to incorporate the rest of the powdered sugar, adding a cup at a time.
Your fondant is ready when it starts to pull away from the sides and starts to clump around the dough hook.
On a clean surface, add some vegetable shortening and then corn starch onto the counter to prevent sticking.
With some crisco on your hands, dump the fondant onto the counter and begin to work it into a smooth round ball. It will be slightly soft and you may use additional powdered sugar(or corn starch)AS NEEDED to form your ball.
Divide the dough in half and wrap them up tightly in some crisco coated saran wrap. Do not use a spray because that will form a crust. Repeat with a second wrapping, then repeat the same process with the other half of fondant.
Place in an air tight container and allow it to sit overnight on the counter.
The next day, knead only the amount required to cover your cake.
On a non stick surface, knead out some fondant. Interchange between a little glycerin and some shortening, just until soft and supple.
      NOTES:
If you are positive that you are not going to color your fondant, then you can add 3 Tbsp of glycerin instead of 2 1/2 to start with. I like to control how much goes into my fondant and if you put too much then it will be too soft, not to mention that food coloring also contains glycerin. If you are unfamiliar with the texture of fondant, go out and purchase some store bought fondant to note the texture.
Do not use butter flavoring shortening. It does not taste good in this.
And no, you cannot taste the crisco in this recipe. :)
This recipe yields about 4 1/2 pounds of fondant.
Work your fondant in batches until nice and smooth.
If at anytime it appears too soft, just knead in more powdered sugar. If it appears too stiff, add in more glycerin.
The sugar and cooking process preserves the dairy ingredients, so there is no worry of spoilage.
Good tasting brands of commercial fondant: Fondx and Fondarific. I hear Satin Ice is good too.

This isn't better than marshmallow fondant. I went to culinary school and majored in Baking & pastry and we used this recipe. And honestly it's the small as the marshmallow recipe because the recipes is a marshmallow base anyways. And milk is the worst to use because it perishable n will spoil way faster than water. Marshmallow recipe is sticky but once it's all mixed in and needed it's has the same consistency only it taste like marshmallows. By the way this isn't real fondant it's a sugar paste.

It's called a sugar paste because it consist mainly of sugar which is crazy cause so is frosting.. lol I've tried many fondants but they're expensive.. I personally use on my cakes is a recipe of marshmallow fondant 1- 2lb bag of powder sugar and 1-16oz bag of mini marshmallows and 2-3 tbsp of water. Once it's doughy and pliable I like to add 1 pack of store bought fondant. (1lb) the store bought fondant gives its a much better texture and the home recipe gives it a better flavor.. it's my favorite.. :) good luck.. it should be about 4lbs of fondant probably enough to cover 6"-8"-10" depends on how think you rolled it but roughly around 3 smaller cakes..

To the pronunciation police... who gives a damn how you say it or how anyone says it... you know what it is, get along with your life. ANYWAY... does anyone know if it is possible to make this version of fondant with agar agar instead. My daughters have a lot of Muslim friends who can't eat anything with gelatin so I want something halal for them

  • @helenaragon1
    @helenaragon1 8 ปีที่แล้ว +4

I didn't care for this recipe fondant is fondant your version is as messy as the marshmallow version you still have to microwave and use powder sugar and need it as well. And your version is more expensive than just a bag of marshmallows, powder sugar and 2tbl spoons of water and you can refrigerate and color and not worry about cracks ect I will stick to the Marshmallow version. Oh and one more thing Marshmallow Fondant may be used immediately vs letting it set over night. I think you made chewing gum.

This was helpful ( although in Europe nobody uses fondant. It's literally sugar)
Just one sligt remark as a linguist to those who are wondering how it is pronounced- "fondant" has stressed first syllable, not second. Both in English and French - UK: /ˈfɒndənt/, US: /ˈfɑndənt/ or /ˈfɑndɑnt/

I love your fondant. My problem started now in the winter. Whats the best temperature to keep it safe. Mine cracked even when it was chewylicious. What should I do to prevent this? I didnt have problems in the summer but I didn't color it then. This time I did. Is there a special thing I should do to keep it perfect?

You can omit the butter flavoring and lemon juice powder. It's just going to be slightly sweeter but not by too much. I do not have the recipe in grams at the moment but I'm sure you can use a conversion chart online. Just google "conversion chart into grams" and something useful should pop up.
