      FYI.
      I've lived in 12 of our 50 states.
      Good food is not regional.
      I live in Texas for 4 years and that is where I had the best pizza.
      I lived in NY and that's where I had the best Asian food.
      Cincinnati was the best meal of my entire life. Washington state was the best smoke house.....
      You can get good food anytime, anywhere without leaving your state. Don't fall for the theme that only Texas has good BBQ. It's a false narrative.

      Mom and pop places generally have better food than the hype of the places that get rated. Yes, Texas was where I had the best pizza. In The Woodlands outside of Houston.

    The meats are so juicy, because they weren't overcooked. Most meat is needing to reach 165° to be done. Medium, or medium rare, is below that temperature. Beef brisket is a tough cut of meat to begin with, so it is cooked with low heat & smoke, to tenderize it.

    mashed potatoes arent always made in a "whipped" state in the US, many like them not completely mashed but "chunky"

      I used to work at a restaurant many years ago that kept the prep cook busy. We could always tell his mood by the mashed potatoes. Light, fluffy potatoes = happy cook. When he was upset or peeved, the lumps had lumps.

    Wearing a California tshirt in Texas is brave. 🤣🤣 I eat my steak medium rare too. And Ribeye is my favorite cut with a Porterhouse being my second fav.

    I worked at a steak chop house for a year back in the day. When somebody would ask for it to be well done, I'd go in the kitchen and have the chef offer up an end piece well done and one medium rare. It's amazing how many changed their mind. I can't remember one single person saying they'll stay with well done. Nice vid guys - happy you both enjoyed yourselves.

      @@wal6377 Yeah, that is the sweet spot. Medium would probably be even better, but cooks don't all cook the same and you will get some too rare. To avoid the hassel, I order medium well too.

      There's a couple of reasons they cook "differently", but it all amounts to fhe same thing.
      They don't want to spend that much time cooking each food item. The more time they spend cooking each item, slows them down, and if the restaurant is in full swing, people wont be happy they need to wait that long for dinner
      They feel they know better. This is pure arrogance (not to say the customer service aspect of what the OP tried was bad, and I DO applaud their initiative).
      They are afraid the customer won't like the meat cooked THAT well done, and will ask for a new steak cooked less anyways.
      My step father would have been someone that would have had his food sent back until they made it WELL DONE. He hated it "red" in any way, shape, or form. He would order food "burned" instead of well done.
      There are some people who think that asking for well done ruins a steak.

    Millie, the reason you are use to dry steak is because you get it well done. The more it's cooked the less juicy it is. Steak is best at medium rare to medium.

      @rmlrl1971 no necessarily. I only eat well done steak and when cooked right it is very tender. Low and slow. Most places cook it too high which dries it out so that it doesn’t take long in order to serve the entire table.

      ​@@JACpotatosSure you will. Low temp is how you get meat (or anything) done on the inside without being overcooked on the outside (and without cooking away all the juices. A nice initial sear helps too).
      It's also how you cook pot roast, or pit roasts, Hawaiian pork roasts, or BBQ for that matter. Low and slow and done all the way through.
      Though I'm in the steak should be medium rare camp.

      @@jackgilchrist 🤦 different temperatures will give different levels of doneness. If you keep it low, it's not gonna be well done... Which is a good thing. Well done meat is gross anyways.
      Unless You're cooking at a high enough temp to get it to well done in the first place. I cook with very precise temps when it comes to meat. It'll never be well done regardless of how long I cook it

    There is another secret to eating juicer steaks and that is to allow them to rest after cooking. If you immediately slice it all the juices come flowing out. Give the outer crust 5-10 mins to set and keep all that juice inside and you'll be golden.

      Perfect advice for grilling or sear to oven cooking. A reverse-sear requires no rest time if cooked properly.

    Millie....a lot of restaurants make mashed potatoes with little chunks of potato. Many have skin in theirs too....or garlic.....so many options.

      OMG - well done --- THE HORROR!!
      medium rare tastes entirely different from a rare steak --- so it is your choice ....
      HOWEVER ......
      my favorite description is to just let the ribeye!! steak walk across the coals --- warmed thru but definitely rare ----some think it is not as good as medium rare where there is a lot of marbling. However, on a hot grill you get graded rareness working from edge to middle ... best of all worlds ..... ahhh

    Whatever surface you cook on, make sure that it is screaming hot before putting the meat on it. That is the easiest way to keep your meat juicy.

      And the easiest way to tell if it's screaming hot is by touching it with your finger. If you immediately scream, you're good to go. 👍

    I'm not from Texas, nor am I even a big fan of Texas, but my family raised beef cattle, so I do know beef. No other state does beef as good as Texas.

    I'm so glad you are enjoying the great state of Texas! Born and raised here. Rib eye steak is my favorite. It's the juiciest because it has more fat in it than other cuts of meat.

    Best BBQ in Texas is found at road side stands and small hole in the wall family owned restaurant and not chain shops.

    Hope you return for another visit. One place to see is Colonial Williamsburg in Virgina. The entire place is a living history museum. All characters working at the Museum are living as if it was the 1670's to the 1730's. Just like it was in the Colonial period before the American Revolution. You can see how early settlers grew cotton, spun the threads, wove cloth and made clothes. Copper Smith's, Blacksmiths. Tin Smith's. Coopers, wagon makers, lumber makers. How food was made over open fire. Baking bread in clay ovens. Building houses and how everything was done in the earliest days of America. You can see why American's have a sence of individualism. Compare to Europeans that more of a sence of collectivism.

    Your steak is what I would call medium, as medium rare should be much pinker. (Definition of medium rare is a "warm, red center". All in all, your meal looked great, but I'd limit my choice of a "steakhouse" to ones that don't even offer many of the options you had. A bit stuffier, and more pricey, but also with quality of meat that would blow you away. In any event, one of my favorites of your videos so far.

      I only eat steak medium rare Grandpa was a butcher.He said steaks should be medium rare and do not use steak sauce.If you have to put steak sauce on your meat, the meats poor quality.

      @@dewelrivera3305 At what cost? Only reason why New York has good steak is because it's probably not New Yorkers cooking it, it's people all over the world. You're not going to find affordable good steak in New York. Places like Texas, you can hit up a small establishment in your tshirt and jeans and have good steak and BBQ, in New York it's fancy suits eating over priced steaks. Comparing a place for the super rich vs a place where it's just ordinary Americans, doesn't make sense.

    The secret to a good steak is to put a nice crust on the outside so it holds all the juices in followed by letting it rest before cutting so those juices thicken up a little and stay inside. You guys had a nice steak.

    For juicy steak: Salt a healthy amount or marinade the steak and refrigerate at least an hour before cooking. (Keeps moisture in the meat, since water will go where the salt is.) Bake at 350 F for about 10-15 minutes, then remove and sear over very high heat in a little oil for 30-60 seconds or so on each side for a good crust. (Reverse sear method) Should be warm and red-to-pink in the center.

    Most people eat a baked potato with the steak instead of the mashed. They will also give you butter and sour cream for you to put on top if you want to. It's delicious

    I am really glad you guys enjoyed your trip to our great country.
    If you come again, drive through the smaller towns in a state.
    Unless I was in a mega hurry, I always traveled the older highways and backroads. The ones that people traveled before the interstate system.
    There's soooo soooo many awesome smaller restaurants and diners in smaller towns. Not to mention wonderful shops with unique items. Especially in the fall you will find loads of festivals and markets.
    The big cities really only offer big buildings and big crowds with big traffic lol.
    There is so very much more to see and do. Not to mention that all the channels all rush to do the exact same thing. Be brave, be rebels and take the initiative to do something different.

    The key is cooking tbe steak slow on low until you get the center perfect, then turn up tve heat and get a perfect sear on the exterior.

    Just to be clear, Terry Black's and Texas are not the only places in the U.S. that you can get good steak or good brisket. I've sampled neither in Texas but I've had some pretty good samples of each on the East coast.

      I'm 58, worked at American Airlines and gotten to travel from coast to coast, overseas and North to South to both borders. I grew up eating BBQ.
      The best BBQ I've ever had was at Terry Blacks.

    Steaks are usually grilled/broiled and not smoked. Different tastes in meat comes down to type of cattle/animal, the age, what it is fed, the soil the feed comes from, climate, etc., etc. Impossible to exactly re-create the exact same taste on a different continent. But it doesn't mean you can't get equally as good in other places -- just different.

    there are different levels of cooking and bbq. once you break though to the top level, it's pretty much all the same with slight differences in spices, rubs, and sauces. but you're still going to be eating wonderful foods. that's nearly on par with each other... so trying to compare two or more top places to each other isn't possible, you can only compare which one you personally like better.

    Silky-smooth potatoes is more like what we would call puréed potatoes or potato purée. Mashed has bits that are still firm, especially in the South. Purée is more of a northern food for sure.

    #1 secret to juicy meat is to avoid over cooking things. Use a thermometer when cooking meat. Always. Also, use the right cooking technique. Barbecue refers to slow cooking at relatively low temps with indirect heat. So, brisket or ribs will cook at 250 degrees F for hours and hours. A grill is used for high heat, direct cooking. Use a grill for steaks (on do them in a cast iron skillet if you want great crust). In any case, use a meat thermometer to determine when to pull the meat off. Season things well to start with. Britain conquered and colonized half the earth at one point, but for whatever reason ignored spices other than in “curry” and decided to keep boiling everything and eating it well done.

    I like my steak rare or very rare if it is well aged, good quality beef. That steak looks medium not medium rare but it may just be the filming.

    My favorite is the rib steak and like it medium rare. I pan fry it in a stainless steel heavy bottom French saute pan. The idea is to not over cook the steak. Salt,pepper and garlic powder both sides. Add a little olive oil to the pan, add the steak cook for 5 minutes, flip the steak and lower the heat and cook for 4 to 5 minutes. Remove the steak to let it rest for 5 minutes . Using temperature thermometer for medium rare the temperature should be 54-57°C. That is for 1 inch or 3cm thick steak. I do the same thing for pan frying a Hamburger although I grind or mince my own meat. I'll grind a chuck steak and a sirloin steak together. Make large 1 inch patties and pan fry the same way as the steak. The left over ground meat I make patties to freeze to use later. Have a wonderful day
